New Mediterranean Concept Arrives in South Beach Solei Beach Club has opened at the Kimpton Surfcomber Hotel on Miami Beach's Collins Avenue, offering Mediterranean-inspired dining and cocktails with ocean views. The venue seats 75 across an 11,500-square-foot poolside space and operates 11 a.m. to 5 p.m. daily, with the bar open until 6 p.m. The menu draws from Spanish and Mediterranean traditions, emphasizing shareable plates and fresh seafood. The raw bar features oysters, ceviche, octopus carpaccio, and a "Seafood Colosseum" of Caribbean lobster, P.E.I. mussels, Quahog clams, and ceviche with optional caviar or stone crab. Pintxos offerings include a mezze board with pimento hummus, cilantro tzatziki, pistachio-mint whipped feta, falafel, crispy halloumi, and chargrilled vegetables. Larger plates include shrimp and chicken paella, tahini salmon with sesame crust, watermelon chess salad, and lobster roll. Desserts include Basque-style pistachio cheesecake and Key Lime pie.

Menu and Bar Program Executive Chef Gastón Javier Sanchez developed the menu. "My inspiration for the Solei Beach Club experience is rooted in the spirit of the Mediterranean—its rich diversity, vibrant culture, and timeless sense of enchantment—fused seamlessly with the energy and flavors of South Florida," he said. The cocktail program features signature creations including the Spicy Señorita (Mezcal and Tequila Blanco), Italian Margarita (Campari and Cointreau), Ibiza Sunset (strawberry, passionfruit, and fresh lime), and the frozen Passion Du Solei with Bhakta "Surfcomber's Private Blend." Solei offers an exclusive branded rosé selected from DAOU Vineyards. A daily rosé "ritual" at 3 p.m. features $5 glasses with DJ entertainment and a bubble shower.

Cabanas and Amenities Luxury poolside cabanas are available for groups and celebrations, featuring plush lounge seating, big-screen televisions, and direct beach access.
