Pebble Beach Resorts has released a summer cocktail collection drawing on California's Central Coast for inspiration, blending premium spirits with house-made syrups, foams, and unexpected garnishes.

The Lineup The six drinks span spirits categories and flavor profiles. Hot Mez pairs 400 Conejos Mezcal with caramelized pineapple purée, habanero agave, and lime, finished with a Tajín rim. Sea Glass combines Grey Goose vodka, blood orange purée, and lemon juice, topped with a cardamom vanilla tuile. Greens in Regulation blends PB Maestro Dobel Reposado with cucumber-celery-jalapeño juice and pineapple. Cloud 9 features Hendrick's gin with prickly pear purée and prickly pear foam. Hugo 75 centers on Pebble Beach Occasions Champagne paired with a Bombay Sapphire and St-Germain jello scallop—a signature house creation served in a shell presentation with elderflower foam and cornflower pieces. Juicy Lie rounds out the spirits offerings with Grey Whale Gin, Lillet Rosé, and macerated strawberry syrup. A Whale Watcher Mocktail option uses Ritual non-alcoholic whiskey alternative with peach and ginger purées.

Why It Matters

Resort beverage programs increasingly differentiate through distinctive house-made components and theatrical presentation. Pebble Beach's use of jello shots, tuiles, and foam—alongside regional sourcing—signals how high-end hospitality operators are leveraging technique and storytelling to justify premium pricing in the competitive luxury segment.
