Sara Kafadar has been elevated to president and chief commercial officer at izzio artisan bakery, formalizing a co-leadership structure alongside founder and CEO Etai Baron as the Colorado-based sourdough brand pushes deeper into retail, foodservice, and new product categories.

Kafadar, who joined izzio as CCO in 2015, brings decades of bakery industry experience — including leadership roles at IAWS Foods and ARYZTA businesses such as La Brea Bakery, Cuisine de France, and Delice de France. In her expanded role, she will continue overseeing sales, marketing, R&D, and brand development, while adding strategic revenue generation and operational efficiency to her mandate. Baron, who has led the company as CEO since 2014, retains oversight of overall company direction and long-term institutional strategy.

"Sara has been an integral partner in building izzio into the business it is today, helping consumers rethink what they expect from their food," said Baron. Kafadar framed the move as a natural evolution of an established working relationship, noting the two leaders bring "complementary strengths and a shared vision" to the brand's next phase.

Retail Momentum

The leadership shift arrives on the heels of two consecutive years of retail sales growth exceeding 40% year over year — a trajectory that earned izzio a spot on Bain & Company's Insurgent Brands list in both 2025 and 2026, a designation reserved for outperforming independent brands reshaping fast-moving consumer goods categories. The brand now sells through more than 15,000 retail locations and earlier this year opened a second production facility in Thornton, Colo., to support rising demand. For operators and retail buyers tracking the artisan bread and bakery segment, izzio's production expansion signals an intent to scale supply without compromising its slow-fermentation, small-batch process — a credibility point in a category increasingly crowded with sourdough-branded products that lack authentic fermentation.

New Formats and Categories

The co-leadership team is moving quickly on product innovation. Izzio recently launched Organic Artisan Sourdough Sandwich Breads to address growing consumer demand for clean-label, high-quality loaves in the packaged bread aisle, and introduced a direct-to-consumer subscription program delivering real sourdough breads across the contiguous U.S. — a channel play that reflects broader foodservice and retail omnichannel strategies brands are deploying to capture loyalty beyond the store shelf.

Three additional SKUs are rolling out this month: a limited-edition Cranberry Orange Sourdough Batard, a Super Sour Sourdough for purists, and a French Sourdough sliced loaf crafted in the tradition of artisan French baking. Looking further ahead, izzio has signaled plans to extend its sourdough platform into categories beyond bread for the first time — an expansion that could open conversations with foodservice operators, café concepts, and specialty retailers seeking differentiated, clean-label baked goods. The company is also pursuing expanded distribution and retail assortment across both the U.S. and Canada, with continued momentum noted in the foodservice channel.

For food and beverage industry professionals, izzio's trajectory illustrates how independent, craft-focused brands can scale strategically — investing in production capacity and leadership infrastructure while protecting the product integrity that drives consumer loyalty in the premium bread segment. Food & Beverage Magazine has tracked the broader rise of authentic fermentation-forward products as a key driver in the packaged bakery aisle.
