The P.F. Chang's bar program just got a significant overhaul. The Pan-Asian chain debuted a redesigned wine list, a weekday Happy Hour with a $15 Sushi & Sip pairing, and a curated Japanese spirits section — moves that signal a sharper focus on driving incremental bar revenue during off-peak dayparts at its more than 300 global locations.
The New Wine Program
The revamped wine list abandons the traditional varietal-by-varietal structure in favor of flavor profiles — ranging from Sparkling & Refreshing to Full & Bold — with pairing recommendations integrated directly alongside select menu items. The most notable addition is Seven Daughters Moscato, available by the glass and bottle, from the Terlato Wine Group brand for which actress Taraji P. Henson serves as strategic advisor and creative collaborator. Seven Daughters Moscato holds the distinction of being the top-selling Moscato in U.S. on-premise establishments, according to Somm.ai. The celebrity partnership gives P.F. Chang's a built-in marketing hook in a crowded casual-dining segment where bar differentiation is increasingly essential to traffic-building. Other new wine additions include Gratien Meyer Crémant de Loire Brut Rosé, Belle Glos "Las Alturas" Pinot Noir, Stags' Leap "Aveta" Sauvignon Blanc, Penfolds Max's Shiraz, and DAOU Cabernet Sauvignon — a range that reflects the chain's push toward premium positioning.
Happy Hour and Spirits Strategy
The new Happy Hour runs Monday through Friday, 3 to 6 p.m., in the bar and on the patio at participating locations. Pricing starts at $6 for select beer and wine, steps up to $9 for cocktails, $12 for full-size appetizers, and tops out at $15 for the Sushi & Sip offering — a Spicy Tuna or California Roll paired with Sapporo or Joto One "Graffiti Cup" Sake. The sake cup itself was designed by Japanese graffiti artist Shiro, adding a collectible element that could encourage trial and shareability.
"Happy Hour should be an opportunity to experience what our kitchen does best," said Steve Solis, VP of Culinary at P.F. Chang's. "With full-size appetizers and the new Sushi & Sip pairing, we're putting the food front and center and giving guests a reason to make us part of their weekday plans."
The Happy Hour menu also debuts a dedicated sake category and a $12 Japanese whisky section featuring Toki, Mars Iwai 45, and Nikka Coffey Grain — served on the rocks, neat, or as a highball. Operators in the casual-dining beverage space have increasingly leaned into Japanese spirits as a differentiation tool, and P.F. Chang's is formalizing that positioning chain-wide. Wine Wednesday extends the bar program with half-price bottles of wine, Champagne, and sake all day for dine-in guests 21 and older at participating locations.
Permanent Menu Additions
Three premium entrées that earned followings as limited-time offerings are now permanent fixtures in a newly expanded Chef's Favorites section: NY Prime Strip Steak Tataki with yuzu ponzu and togarashi aioli; Lobster & Prawn Fried Rice with cremini mushrooms and lobster sauce; and Oolong Chilean Sea Bass, a tea-marinated wild-caught fillet with shishito peppers and ginger-soy sauce. The sushi lineup also expands permanently with Spicy Tuna Crispy Rice, Tiger Roll, Philly Roll, and a shareable Sushi Boat. Lobster & Prawn Fried Rice and Oolong Chilean Sea Bass are now available for takeout and delivery as well, broadening off-premise revenue potential for those items.
For restaurant operators watching casual-dining menu strategy, the move to graduate tested limited-time offers into permanent placements reflects a disciplined approach to menu development — using the LTO window as a real-time focus group before committing to the full menu footprint. All new offerings are available at participating P.F. Chang's locations; pricing and availability vary by market.
