The New Location

Metro Diner has cut the ribbon on its first Lecanto, Florida, restaurant, planting the Jacksonville-born chain deeper into the Sunshine State's fast-growing Gulf Coast communities. The 3,710-square-foot unit at 3351 W. Norvell Bryant Hwy., inside the Summit View at Corta Commons development, seats 134 guests indoors and another 24 on a patio—a footprint sized for the family-dining volume Metro Diner is built around.

The location is owned and operated by Managing Partner Melissa Deskins, a culinary professional holding both a Culinary Arts degree and a Baking & Pastry degree, with more than 20 years of restaurant industry experience behind her. "Metro Diner combines the welcoming feel of a hometown diner with the support of an established brand," Deskins said. "I'm excited to become part of the Lecanto community and create a place where families can gather for everyday meals and life's special celebrations."

Menu and Operations

The all-day menu centers on from-scratch comfort food—fluffy omelets, pancakes, breakfast platters, 100% Angus beef burgers, and BBQ ribs. Two signature items are likely to drive early trial: the Fried Chicken & Waffle, served on a Belgian waffle with strawberry butter and sweet-and-spicy sauce, and the Iron City Meatloaf, which earned national exposure when Guy Fieri featured it on Food Network's Diners, Drive-Ins and Dives. Deskins named the classic Bissell Breakfast—eggs, hash browns, sausage patties, toast, and a short stack—as her personal go-to. The restaurant opens daily from 7 a.m. to 3 p.m., with dinner service and extended hours to 8 p.m. planned as an expansion phase.

Brand Growth Context

Established in 1992 as a family-owned Jacksonville eatery, Metro Diner now operates more than 60 locations east of the Mississippi, positioning it among the larger locally-owned-and-operated family dining concepts in the country. The Lecanto opening reflects a broader push by the brand into Florida suburban and exurban markets, where population growth is outpacing commercial food-and-beverage supply. For independent operators considering franchise or licensing partnerships, Deskins's trajectory—culinary credentials, deep industry tenure, community-first strategy—mirrors the operator profile increasingly favored by emerging casual and family-dining chains seeking long-term unit stability over rapid rollout. Deskins has also committed to community engagement, including partnerships with local schools, family organizations, and the Citrus County Chamber of Commerce, a localization tactic that can accelerate brand adoption in smaller markets.
