Expansion Targets Las Vegas Arts District and Henderson

Meráki Greek Grill is pushing into new markets this summer with three restaurant openings across the Southwest, including a sixth and seventh location in Las Vegas and a third location in Salt Lake City.

The fast-casual Mediterranean concept will debut its Arts District location in June at 1551 S. Commerce St., Suite 110 in Las Vegas. The 3,300-square-foot restaurant seats up to 85 guests and features the brand's signature bright atmosphere inspired by Greek design.

Also opening in June is Meráki's third Utah location in Salt Lake City.

In July, the chain will open its seventh Las Vegas location at 1685 E. Cactus Ave., Suite 100 inside The Village at St. Rose in Henderson. The 3,600-square-foot space includes a spacious outdoor patio and seats up to 96 guests.

Menu Refresh Adds Desserts, New Appetizers

Conciding with the expansion, Meráki has refreshed its menu with new appetizer and dessert offerings. New appetizers include Taverna Cheese—lightly fried and served with hot honey. Dessert additions feature Greektown Donuts served with Nutella and four flavors of Meráki Frozen Greek Yogurt: baklava with honey, olive oil with sea salt, chocolate sauce with chocolate flakes, and Biscoff cookie with caramel.

The menu continues to feature signature bowls, gyros, spreads, and kalamakia—traditional skewered meats flame-grilled and finished with lemon, olive oil, and oregano.

Growth and Recognition

Founded by Jerry Goumroian alongside franchise partner Joseph Djavairian, Meráki has grown to five existing Las Vegas locations and two in St. George, Utah. The brand has earned recognition in the Las Vegas Review-Journal's "Best of Las Vegas" awards and was named to Yelp's "Top 100 Restaurants in America."

"We've been incredibly grateful for the support we've received from the Las Vegas community and beyond over the years," said Goumroian. "As we continue to grow, our goal remains the same: creating a welcoming place where people can enjoy fresh, high-quality food and experience the hospitality and culture that inspired Meráki from the beginning. Expanding into new neighborhoods and continuing our growth in Utah is really exciting for our entire team."

The brand's name derives from the Greek word "meráki," which means to do something with love, passion, and soul—a philosophy the restaurant applies to its operations and guest experience.

Why It Matters

Meráki's rapid expansion reflects sustained demand for elevated fast-casual Mediterranean dining in the Southwest, particularly in Las Vegas where the brand has already established a foothold. The menu refresh—particularly the addition of desserts and Greek yogurt options—signals an effort to increase daypart coverage and guest frequency beyond traditional lunch and dinner dayparts.
