DRYAGER, a German manufacturer of dry-aging refrigeration cabinets, has named Hayter Industries its U.S. public relations agency of record, signaling an acceleration of its North American expansion strategy. Hayter, which has spent more than 30 years in culinary appliance communications, will promote DRYAGER's equipment to chefs, hospitality professionals, and butchers. The partnership underscores growing demand for precision dry-aging technology in high-end foodservice.

Why This Matters for Operators

For restaurants in fine dining and upscale casual segments, precision dry-aging has become a differentiator tied to menu pricing and cost control. A dedicated U.S. agency appointment suggests DRYAGER believes domestic demand justifies more aggressive market penetration and operator education. Originally developed by the Landig family in Germany, DRYAGER operates in more than 60 countries, with its customer base centered on high-end restaurants, luxury hotels, steakhouses, and artisan butcher shops.

The Technology

DRYAGER's core offering centers on SmartAging technology, which automatically regulates temperature, humidity, and airflow to create controlled aging environments. The system allows operators to dial in desired flavor intensity, texture, and moisture loss across beef, pork, poultry, fish, cheese, and charcuterie.

"DRYAGER's technology is unmatched and their products are showpieces with a substantial ROI," said Ryan Hayter, president of Hayter Industries. "The company was the first to master the complexity traditionally associated with dry aging in a plug-and-play system that dials in the desired flavor intensity, texture, and characteristics of each cut in a safe and consistent manner with minimum weight loss."

Dry aging is a controlled fermentation process where proteins are held in climate-controlled environments for days or weeks, concentrating flavors and tenderizing meat through moisture loss.

Emerging Opportunities

While beef and pork remain the primary applications, the company notes that dry-aged fish is emerging as a trend among premium seafood concepts. The expanded PR push signals DRYAGER's confidence in capturing share among high-volume hospitality operators seeking equipment-driven menu differentiation.
