Chef Brad Wise's San Diego-based TRUST Restaurant Group has opened The Wise Ox, a butcher shop and deli concept, at UnCommons in southwest Las Vegas. The location marks the group's second Las Vegas venture, following the 2025 opening of Rare Society steakhouse.
The Butcher Counter The Wise Ox sources hand-cut beef, pork, lamb, and chicken—the same proteins featured across TRUST Restaurant Group's eight concepts. The butcher case stocks both common and hard-to-find cuts, dry-aged steaks, house-made sausages, rotating marinades, and spice blends. An in-house dry-aging program aims to bring restaurant-quality steaks to home cooks. The operation follows a zero-waste kitchen philosophy, repurposing nearly all scraps and trim into stocks, butters, tallow, and ground meats.
The Deli Counter The Las Vegas location will serve signature sandwiches daily, including a Cheesesteak, Smoked Turkey sandwich, and Dry-Aged Burger, plus hand-cut Beef Fat French Fries. Non-alcoholic and alcoholic beverages are available for in-shop dining.
Subscription Service Launching in 2027 The Wise Ox is launching the Ox Box, a monthly subscription curated by Chef Wise, in early 2027. The subscription will feature more than 10 pounds of premium beef, chicken, and pork—some marinated, some spiced—vacuum-sealed for convenience. Subscribers will receive recipes and online cooking tips.
Hours and Location The Wise Ox is open Tuesday through Saturday, 10 a.m. to 6 p.m., with sandwiches available until 5 p.m. Extended hours to be announced. The shop is located at 8475 Michael Cherry Ave., Suite 120, within UnCommons. Wise opened his flagship restaurant, TRUST, in 2016, earning a Michelin Plate. TRUST Restaurant Group's portfolio now includes eight concepts ranging from fine dining to an ice cream window. The San Diego butcher shop location, which opened in 2020, has built a loyal customer base and established the model for expansion.
Why It Matters
The Wise Ox represents a multiunit operator leveraging a successful butcher-retail model across markets, combining direct-to-consumer retail with food-service revenue. The subscription box model adds predictable recurring revenue while the zero-waste operating philosophy aligns with growing operator interest in sustainability margins.
