A 26-year-old former general manager has become one of the more striking franchise succession stories in the family sports pub segment. Louis Dirocco, who started in restaurants at 15 and spent years working every station inside a Beef 'O' Brady's before buying the Mount Dora, Florida location on Oct. 1, 2025, has since acquired a second unit at 2926 13th Street in St. Cloud — and he's already eyeing a four-location portfolio.
From Shift Lead to Multi-Unit Owner
Dirocco's path tracks the kind of internal pipeline that franchise systems often aspire to but rarely document so cleanly. He began at McDonald's at 15, advanced to shift lead within a year, then spent four years at Keke's Breakfast Cafe before joining Beef 'O' Brady's under then-owner Ed Conlan in the Mount Dora unit. Over roughly six years he rotated through server, cook, bartender, and general manager roles — a breadth of operational experience that gave him full-floor fluency before he ever signed a franchise agreement.
"I've been a server, a cook, a bartender and a general manager. I can literally run every single position in the restaurant," Dirocco said. When Conlan decided to sell, he approached Dirocco directly, a transition that kept institutional knowledge inside the unit and preserved existing staff and customer relationships — an outcome that has clear value for a neighborhood-oriented brand.
The Second-Unit Decision
The St. Cloud acquisition happened quickly. Within weeks of closing on Mount Dora, Dirocco contacted his area franchise director expressing interest in additional locations. The director surfaced three available units roughly two weeks later; Dirocco chose St. Cloud as the best fit for his growth plan. His stated goal is to reach four Beef 'O' Brady's locations while remaining an owner-operator focused on community-centered hospitality.
"I called our area franchise director and told him to keep his ear to the ground if any locations came up for sale in Central Florida," Dirocco said. "My goal now is to keep building these restaurants, stay focused and eventually own four Beef 'O' Brady's locations."
Why the Model Matters for Operators
For the broader franchise restaurant industry, Dirocco's trajectory offers a practical case study in leveraging internal talent as a succession channel. Beef 'O' Brady's parent company, FSC Franchise Co., operates more than 250 locations across three brands — Beef 'O' Brady's, The Brass Tap, and Newk's Eatery — giving franchisees a multi-concept ecosystem if they choose to diversify. Beef 'O' Brady's itself runs 120-plus family sports pub locations across 21 states.
The St. Cloud deal also underscores a dynamic that multi-unit franchise development coverage has tracked closely: experienced operators who enter ownership through internal succession tend to ramp faster operationally because brand culture, vendor relationships, and staff dynamics are already familiar. For franchisors managing aging owner cohorts, cultivating GMs as buyer-ready candidates is increasingly a viable exit-strategy tool — one that keeps units open and performing rather than sitting dark during an ownership transition.
