Eggs Up Grill has opened a new location in Bonaire, Georgia, marking another expansion for the daytime restaurant franchise. The restaurant is owned and operated by Celia St. Louis, a retired military veteran and current logistics manager contractor for Robins Air Force Base. St. Louis brings more than 21 years of military experience, having retired in 2012 after a career that included roles in inventory management, aircraft parts supply and command-level policy development. She also owns a real estate business and plans to continue both roles alongside her restaurant operation. "Celia's commitment to service and community aligns perfectly with what Eggs Up Grill stands for," said Ricky Richardson, CEO of Eggs Up Grill. "Her leadership experience and passion for people will make this location a great addition to Bonaire." St. Louis discovered Eggs Up Grill while researching concepts for commercial land she had purchased in the area. She was drawn to the brand's daytime model and community focus. Her decision was further influenced by experiences during the COVID-19 pandemic, when she became aware of how many elderly individuals depend on restaurants for daily meals. "Opening this restaurant is about creating a place where people feel taken care of and connected," said St. Louis. "I want it to be somewhere the community can count on every day."

Operations and Menu The Bonaire location operates daily from 6 a.m. to 2 p.m., offering dine-in, online ordering and catering. The menu includes omelets, breakfast sandwiches, bowls and burgers.

About the Chain Eggs Up Grill was founded in Pawleys Island, South Carolina, more than 25 years ago.

The chain operates more than 110 locations nationwide, with more than 90 additional units in development or committed to open. The brand has earned recognition on Entrepreneur magazine's Franchise 500 and was ranked No. 7 on Entrepreneur's Top 10 Full Service Restaurants.

Why It Matters

For operators, this opening demonstrates the continued expansion of the daytime-focused segment in franchising. The Bonaire location signals demand for breakfast and lunch concepts in emerging markets, with St. Louis's background in military logistics and supply chain management reflecting a trend of career-changers bringing operational discipline to franchise ownership.
