Portland Restaurant Launches Spring Afternoon Tea Service
Nodoguro, Chef Ryan Roadhouse's James Beard Award finalist restaurant in Portland, has unveiled a new spring afternoon tea menu that emphasizes peak seasonal ingredients and Japanese culinary philosophy.
The menu highlights cherry blossoms, ramps, asparagus, radishes, firefly squid, and ume—Japanese apricots—presented with what the restaurant describes as restraint and intention. New seasonal additions include a candied kumquat roll cake, rose and cherry blossom cream puff, and asparagus tart.
Concept Rooted in Japanese Kissaten Tradition
Afternoon Tea at Nodoguro draws from the culture of a Japanese kissaten—traditionally a place to sit, drink tea or coffee, and spend uninterrupted time. The service begins with warm dashi and small bites, moves into savory tea sandwich courses, and concludes with seasonal sweets.
The experience is deliberately paced. Guests are invited to linger over sake or Champagne in what the restaurant positions as an alternative to fast-paced dining.
"Spring is one of my favorite seasons to cook," Roadhouse said. "Haru, or spring, brings a sense of renewal, with early greens, radishes, fresh seafood, and ingredients like bamboo shoots that appear just once a year. I look forward to these flavors each season and carry those memories with me into the next. We're lucky to live in a volcanic region that shares so much with Japan, from the forests and ocean to the produce and seasons, which keeps us in sync with how we cook and live."
Regional Sourcing Informs Restaurant's Approach
Roadhouse frequently travels to Japan to visit producers informing Nodoguro's work—including fish brokers, pottery makers, sake breweries, and tea producers. His recent trip included visits to Toyama, Iwa Brewery, Yamaharu, and Boroichi, a 450-year-old flea market.
Nodoguro operates on a single-seating model with a seasonal menu. Founded by Ryan and Elena Roadhouse, it evolved from a pop-up into one of Portland's established dining destinations.
Service Details and Availability
Afternoon Tea at Nodoguro is offered every Sunday from 2–4 p.m. Reservations are $150 per person and available through the restaurant's website. The restaurant is located at 515 SW Broadway in Portland.
Roadhouse has been a multiple-time James Beard Award semifinalist for Best Chef: Northwest & Pacific and is named a finalist for 2026. Nodoguro was named Portland Monthly's Restaurant of the Year in 2015.
Why It Matters
As fine dining navigates post-pandemic consumer preferences, Nodoguro's model—limited seating, seasonal specificity, and premium pricing tied to cultural experience—represents a sustained operator strategy in markets valuing intentionality and craftsmanship over volume.
