Miami's Fine Dining Benchmark Holds Strong

The Bastion Collection has retained all three of its Michelin Stars across two Miami restaurants in the 2026 Florida Michelin Guide, announced today. L'Atelier de Joël Robuchon maintains two stars—the highest designation in South Florida—while Le Jardinier holds one star.

Both restaurants have been recognized since the Michelin Guide's 2022 debut in Florida, marking five consecutive years of retention for each concept.

A Rare Distinction

L'Atelier de Joël Robuchon's two-star status remains unique in South Florida. The restaurant operates under Executive Chef James Friedberg, with pastry overseen by Chef Salvatore Martone, described as a longtime Robuchon protégé. The kitchen emphasizes classical French technique interpreted through modern sensibilities, with an open counter-style dining format.

"L'Atelier de Joël Robuchon is grounded in a very clear philosophy of consistency and execution, rooted in the Robuchon approach and the responsibility of carrying that legacy forward. Maintaining that level of excellence reflects the commitment and focus across the kitchen. Earning two MICHELIN Stars year after year is something we never take for granted, and we're very grateful to see that commitment recognized again by the MICHELIN Guide," said James Friedberg, Corporate Executive Chef at L'Atelier de Joël Robuchon.

"Receiving this recognition reflects the discipline, care, and consistency across every part of the team. In pastry, as in the kitchen, that foundation is built day by day through structure, repetition, and a shared commitment to dedication, craft, and passion. We're incredibly proud to see that work continues to be recognized by the MICHELIN Guide," added Chef Salvatore Martone, Corporate Pastry Chef at The Bastion Collection.

Le Jardinier's Consistency

Le Jardinier Miami, a collaboration between The Bastion Collection and Chef Alain Verzeroli, represents a contemporary take on seasonally driven, ingredient-focused French cuisine. The restaurant is one of four Le Jardinier locations globally, with Michelin stars also held in Houston (at the Museum of Fine Arts) and in Geneva and New York.

Chef de Cuisine Mario Da Silva leads the Miami kitchen. "Seeing Le Jardinier recognized by the MICHELIN Guide is incredibly meaningful. The focus in the kitchen is always on maintaining a clear culinary perspective and leading with intention day to day. Working closely with Chef Alain Verzeroli and Chef James Friedberg has been a formative part of my development, and their approach continues to shape how I lead the team. That mentorship is a big part of how we maintain the standard and continue refining our approach," Da Silva said.

Leadership on Recognition

Alain Verzeroli, Culinary Director at The Bastion Collection, emphasized the group's commitment to mentorship: "In Miami, our focus has always been on maintaining a very high level of execution, grounded in discipline and supported by strong teams, everything we value at The Bastion Collection. It reflects the work happening every day at both L'Atelier de Joël Robuchon and Le Jardinier, and the talent we're proud to cultivate within them. Watching that development is deeply rewarding, and our responsibility is to mentor and support the next generation so that standard is carried forward. We're equally thrilled for Chef James Friedberg and Chef Mario Da Silva, whose dedication and leadership continue to uphold that level every day."

Deleon Pinto, Chief Operating Officer at The Bastion Collection, noted: "We are deeply honored to retain our three MICHELIN Stars in Florida for the fifth consecutive year. Sustaining that level of recognition over time reflects the strength of the systems and teams we've built across the business, and our long-term commitment to maintaining that standard as we continue to grow."

About The Bastion Collection

The Bastion Collection operates 10 Michelin-starred restaurants globally and holds 3 Michelin Keys. Beyond Miami, the group maintains L'Atelier de Joël Robuchon in Geneva (two stars), Le Jardinier locations in Houston, Geneva, and New York, and additional concepts across New York, Houston, and Geneva. The group is a subsidiary of Crest Investment Company.

Why It Matters

For Miami's fine dining operators, sustained Michelin recognition signals the market's maturation as a destination capable of competing with established culinary capitals. The Bastion Collection's retention—particularly L'Atelier's rare two-star status—underscores both operational discipline and the critical importance of chef continuity and mentorship in maintaining top-tier standards. The announcement also reflects broader market dynamics: Miami's fine dining segment continues attracting and retaining talent capable of executing at Michelin-level service and cuisine standards.
