Chef Germán Sitz's restaurant Niño Gordo has arrived in Miami, bringing with it an unconventional culinary narrative rooted in Argentina's lesser-known Jewish gaucho community.
Sitz hails from La Pampa, Argentina's cattle country, where his family has raised livestock for more than 130 years. His ancestors were Jewish immigrants who settled the agricultural frontier, establishing what historians describe as a distinct cultural lineage within Latin America. It was his grandmother—a second-generation Jewish gaucho—who provided the startup capital for his first restaurant venture.
"That heritage remains central to his philosophy today," according to biographical materials. Sitz has built his career on respecting land stewardship, traceability, and Argentina's live-fire cooking traditions while adapting them for contemporary diners.
Building a Buenos Aires Empire
Over the past decade, Sitz and partner Pedro Peña have established one of Buenos Aires' most recognized restaurant groups. Niño Gordo's flagship location recently ranked No. 21 on Latin America's 50 Best Restaurants list before expanding to the U.S. market last year.
The Miami outpost reflects Sitz's cross-cultural approach: Argentine fire-cooking techniques meet Asian flavors and design principles. The space features red lanterns, mirrored dining rooms, fish tanks filled with toys, and concealed cocktail bars—visual references to Buenos Aires, Tokyo, and Miami layered into a single immersive experience.
