Walk-On's Sports Bistreaux has released interior renderings for a next-generation prototype that cuts its traditional restaurant footprint nearly in half, a move that could significantly expand the brand's site-selection options for franchisees across the country.

The new design, created by Madrid-based restaurant design firm Livit, targets a 3,500- to 4,500-square-foot footprint — compared to the brand's longstanding 7,000- to 8,000-plus-square-foot standard. The first location to use the new format will open on Perkins Road in Baton Rouge in early 2027, spanning approximately 3,688 square feet with seating for 125 guests.

The Kit-of-Parts Approach

Rather than mandating a single fixed layout, Walk-On's Sports Bistreaux has structured the new design as a "kit of parts" — a modular system that lets franchisees select or add elements based on the specific market, site constraints, and operator preference. The framework preserves the brand's signature high-energy sports-viewing atmosphere while giving developers room to adapt. Key features include a large-scale TV wall with an upgraded A/V package, a peninsula-style bar configurable to different floor plans, a flexible lounge area that can handle game-day crowds or overflow dining, and an outdoor patio TV wall that extends the sports-viewing experience and adds exterior visibility.

The kitchen has also been reworked for efficiency. New equipment — including clamshell grills — is intended to simplify crew training, improve ticket-time consistency, and reduce complexity without trimming the menu. A dedicated third-party delivery pickup zone with cubbies near the host stand addresses the operational friction that off-premise volume creates in a full-service sports bar environment, a challenge increasingly common across casual dining and bar-segment restaurants.

Franchisee and Market Implications

"We wanted to rethink what the Walk-On's experience can look like without losing what makes us Walk-On's," said Brandon Landry, CEO and co-founder of Walk-On's Sports Bistreaux. "The new design gives our franchisees more flexibility in where and how they build, while keeping the energy, hospitality and community connection our guests know and love."

The prototype draws directly on operational data from Walk-On's existing 3,700-square-foot inline location at The Battery mixed-use development in Atlanta — a site that proved the brand could execute its full menu and sports-bar experience in a compact format. The Baton Rouge opening is intended as a purpose-built proof of concept rather than a one-off adaptation.

Localization remains central to the design language. Each location will feature wall elements spotlighting area high schools, local athletes, jerseys, and other community touchpoints — a strategy that differentiates Walk-On's from national sports-bar competitors and reinforces the hometown identity that has driven the brand since its 2003 founding in Baton Rouge. The host stand doubles as a merchandise station, giving guests an immediate brand touchpoint on arrival.

For operators tracking sports-bar and entertainment-dining trends, the Walk-On's move reflects a broader industry pattern: established full-service brands rearchitecting their prototypes to fit inline, end-cap, and mixed-use real estate that was previously out of reach. A smaller required footprint lowers construction costs, widens the universe of viable sites, and shortens the path to franchisee profitability — all factors that matter as development capital remains selective.

Walk-On's, named ESPN's No. 1 Sports Bar in America, currently operates more than 80 locations nationwide and is regularly ranked on the Restaurant Business, Entrepreneur, Franchise Times, and Nation's Restaurant News top-500 lists.
