The Venetian Resort Las Vegas has secured four restaurants in the inaugural MICHELIN Guide Southwest—Bouchon by Chef Thomas Keller, COTE Korean Steakhouse, Estiatorio Milos, and Mott 32—giving it the highest concentration of Michelin-recognized dining under one roof in Las Vegas. The recognition underscores the resort's culinary repositioning following a $1.5 billion reinvestment completed this year. "Being recognized by the MICHELIN Guide is an extraordinary honor and a testament to the talent, creativity, and dedication of our restaurant partners," said Julian Griffiths, senior vice president of food and beverage of The Venetian Resort Las Vegas. "To have four restaurants represented in the inaugural MICHELIN Guide Southwest, more than any other resort in Las Vegas, speaks to the depth and diversity of our dining collection and our commitment to delivering exceptional culinary experiences for our guests."

Expanded Dining Portfolio The resort introduced 12 new food and beverage concepts within the past year, ranging from fast-casual offerings at Via Via Food Hall to chef-driven destinations including Bazaar Meat by José Andrés and COTE by Simon Kim. The culinary expansion represents a deliberate shift toward positioning dining as a primary draw rather than a secondary amenity.

New Programming The resort also launched Culinary Crossroads, a program of curated pop-up events throughout 2026.

Planned experiences include "The Generational Tasting Tour" at CUT featuring Wolfgang Puck and his son Byron Lazaroff-Puck, "Spain My Way" with José Andrés, and an exclusive pop-up of Michelin-Bib Gourmand fried chicken concept COQODAQ at COTE.

Why It Matters

As Las Vegas hospitality continues to compete on experiential amenities beyond gaming, fine dining concentration has become a competitive asset. The Venetian's Michelin density positions it distinctly against Strip competitors and signals renewed operator focus on culinary investment as a revenue driver and brand differentiator in mature markets.
