Frozen cinnamon roll startup Sunshine Buns is entering its most significant retail moment to date, landing on shelves at Target stores across the country while simultaneously closing $7 million in Series A funding — a combination that signals rapid momentum in the premium frozen breakfast segment.
The Target rollout follows earlier placement in Southern California Costco warehouses and a roster of regional grocers including Hy-Vee, United Supermarkets, Harmons, New Seasons Market, Gelson's, and Bristol Farms. At least one additional major national grocery retailer is expected to come on board before the end of the year, according to the brand.
The Funding Play
The $7 million Series A is earmarked for the operational infrastructure required to keep pace with accelerating retail demand. Priorities include increased production capacity and inventory build, expanded marketing investment, new product development, and headcount growth. For a brand that launched from home-baked Utah orders in 2022 and grew into a storefront before breaking out regionally, the raise represents a meaningful step toward national scale.
"There's a lot of joy wrapped up in a homemade cinnamon roll, and seeing my mom's recipe go from our kitchen to freezer aisles across the country is incredible," said Chrisi Hammer, Co-Founder of Sunshine Buns. Hammer co-founded the brand with her husband Matt and longtime friends Kass and Brian Martin, anchoring the product in a 40-year-old family recipe from her mother.
Shelf Appeal and Positioning
Sunshine Buns differentiates on convenience — fully baked, individually wrapped rolls heat from frozen to ready-to-eat in 45 seconds in the microwave — and on ingredient transparency, calling out real cream cheese frosting and 8 grams of protein per bun on updated packaging. The brand refreshed its retail packaging earlier this year with a brighter, more consumer-facing design intended to communicate those attributes at the freezer door.
The three current SKUs — Original with Cream Cheese Frosting, Cookies & Cream, and Strawberries & Cream — sit squarely in the better-for-you, better-ingredient premium tier that has driven significant growth in the frozen breakfast category over the past several years, as consumers trade up from commodity frozen pastries toward brands with a cleaner story and a distinct origin.
Operator and Retail Takeaway
For foodservice and hospitality buyers watching the frozen breakfast segment, Sunshine Buns' trajectory reflects a broader pattern: regional brands built on authentic culinary heritage are increasingly finding national retail traction by leading with convenience format and ingredient credibility. The 45-second microwave claim, combined with single-serve packaging, also positions the product as a potential candidate for hotel grab-and-go, convenience foodservice, and non-commercial breakfast programs — channels that premium frozen food suppliers have increasingly targeted as labor-constrained operators seek quality breakfast options that require minimal prep.
Kass Martin, co-founder, framed the Target launch as a platform for further discovery: "We have big plans for our buns, and our goal is to build Sunshine Buns into something special people can find wherever they shop."
With a national footprint taking shape and growth capital in hand, the brand is positioned to move from regional darling to a meaningful presence across the freezer aisle heading into 2027.
