New Drive-Thru Model Targets Convenience With Craft Quality Sunfly, a drive-thru beverage concept, opened its first location at 4740 S. Colony Blvd. in The Colony, Texas, on October 8, 2026. The concept blends bar-caliber craft drinks with the speed and accessibility of a drive-thru format. Founded by Matt Bailey and John Brennan, hospitality operators with backgrounds in craft cocktail bars and chef-driven kitchens, Sunfly aims to deliver premium ingredients and techniques typically found in full-service establishments at an approachable price point. "Sunfly grew out of our passion for creating great drinks," said Matt Bailey, Co-Founder of Sunfly. "John Brennan, my business partner, and I wanted to bring the creativity and quality of our full-service restaurants to a fast, approachable, yet elevated drive-thru experience."
Menu Spans Functional and Indulgent Options The menu features Nitro Lemonades like Strawberry Basil and Blueberry Coconut; Matcha Clouds with fruit cold foam, including Mango Tango, Colada Crush and Banana Brulée; and Java Clouds featuring nitro cold brew in combinations such as Golden Foster, Blondie Mudslide and Blueberry Muffin. Hydro Quenchers feature coconut waters with natural electrolytes, while Glow Ups feature aloe water tonics. Customers can customize drinks with functional add-ins including protein, collagen, prebiotic fiber, lion's mane and electrolytes. Food offerings include fresh-baked cinnamon buns, scones and cookies, plus savory breakfast and grilled chicken wraps. Light snacking options comprise house-toasted crunchy mix and a boutique gummy blend. Most beverage and snack combinations cost around $10.
Loyalty Program Drives Repeat Visits Sunfly is launching Cabana Club, a 15-week series of limited-edition weekly giveaways tied to its signature drinks. The program uses limited quantities each week to encourage repeat visits and social media engagement. The company plans to expand across the Dallas-Fort Worth region following this opening.
Why It Matters
The drive-thru beverage segment continues to attract operators seeking higher-margin, faster-service models. Sunfly's focus on functional ingredients and cocktail-bar aesthetics reflects broader consumer interest in wellness-oriented drinks and premium casual formats that don't sacrifice speed or convenience.
