Four-Hands Dinner Series Returns with Japanese Chef
Sofitel Legend Metropole Hanoi is hosting a series of exclusive culinary events this May at its fine dining restaurant Le Beaulieu, featuring collaborations with Michelin-starred guest chefs.
On May 29 and 30, Chef Hiroyuki Matsumoto of one-Michelin-star Restaurant Prunier in Tokyo will join Le Beaulieu's Chef de Cuisine Charles Degrendele for a "Rendez-vous" four-hands dinner. The collaboration will fuse French culinary heritage with Japanese precision, using seasonal ingredients sourced from both traditions.
"This exclusive dinner celebrates two icons: Le Beaulieu (established in 1901) and Prunier (established in 1934). Both institutions share not only a storied heritage but also a chef-driven passion for adding a sophisticated, modern touch to French fine dining."
Chef Matsumoto trained at legendary establishments in France, including three-Michelin-star La Côte d'Or. According to the hotel, he is "known for his mastery of authentic French gastronomy" and "brings a contemporary lightness to his dishes that delight the senses."
Dinners run from 6 p.m. to 10:30 p.m., priced at VND 4,900,000++ per person (approximately $190 USD) or VND 7,400,000++ with wine pairing.
Provençal Sunday Brunch with Guest Chef
On May 31, Le Beaulieu will host a special Provençal-themed Sunday Brunch featuring Chef Louis Gachet of one-Michelin-star Le Feuilée in Provence. The service will include Provençal-inspired creations alongside French classics, premium seafood, artisanal cold cuts, and French cheeses, accompanied by live jazz.
Brunch service runs from 12 p.m. to 3:30 p.m., with pricing at VND 3,500,000++ per person, VND 4,500,000++ with free-flow wine, or VND 5,500,000++ with free-flow wine and Champagne. Children under 6 dine complimentary; children aged 6-11 receive 50% off.
Seating is limited and reservations are required. Accor+ Explorer members receive special dining benefits.
Historic Milestone Year
The events coincide with Sofitel Legend Metropole Hanoi's 125th anniversary this year. The property, which opened in 1901, operates as part of the six-property Sofitel Legend collection, which focuses on heritage properties with personalised service in culturally significant locations worldwide.
The hotel features 358 rooms across two wings—a Heritage Wing and an Opera Wing—plus three named suites after notable historical guests: Graham Greene, Charlie Chaplin, and Somerset Maugham.

Why It Matters
For luxury hospitality operators, these guest chef events represent a proven strategy for driving high-margin F&B revenue and creating shareable experiences that generate earned media. The collaboration model—pairing in-house expertise with visiting Michelin stars—attracts affluent diners and justifies premium pricing while building credibility with culinary-focused guests.
