Seoul's Bar Cham—ranked No. 33 on Asia's 50 Best Bars 2026 and No. 71 on the World's 50 Best Bars 2026—has landed in New York City, joining Genesis House Restaurant as its exclusive beverage partner in what marks the Seoul bar's first official restaurant partnership outside Korea. The revamped second-floor dining room in the Meatpacking District is operated in partnership with Hand Hospitality, the New York-based group founded by Kihyun Lee in 2011 whose portfolio spans acclaimed Korean and Japanese concepts including Jua, Cho Dang Gol, and Her Name Is Han.
The Food Program
The menu is anchored by a three-expression bulgogi program spotlighting regional preparation styles from Seoul, Eonyang, and Gwangyang—a structure that signals how seriously the kitchen is approaching Korea's internal culinary geography. Shareable dishes including seafood jeon, yukhwe, Korean fried chicken, and bingsoo round out the offering, with seasonal ingredients woven throughout. The approach reflects a broader shift in upscale Korean dining away from catch-all menus and toward regionalism as a genuine point of differentiation.
Bar Cham's New York Cocktail Menu
Bar Cham, founded in 2018 in Seochon—one of Seoul's oldest neighborhoods—builds its cocktail program around six distinct regions of the South Korean peninsula, using spirits and ingredients sourced across the country. At Genesis House, that framework translates into a beverage menu designed to tell geographic stories in a glass. Standout offerings include the Songpyeon, a sweet-savory blend of Pungjeong Sagye Winter Soju 42, chestnut makgeolli, lemon, ginger, cinnamon, and chocolate, and the Cham Negroni, built on roasted Solomon's seal, soju infused with dried mandarin peel, vermouth, and Campari. "Our goal was to create a beverage program that carries the spirit of what we have built in Seoul to New York, with each cocktail telling a story about the regions, history, and seasons that inspire it," said Byungjin Lim, co-owner and bartender at Bar Cham.
For operators watching beverage program innovation in fine-casual and experiential dining, the Bar Cham model is worth noting: a hyper-specific sense of place—expressed through sourcing, naming conventions, and narrative—has helped the bar achieve global recognition without sacrificing its Korean identity. That kind of regional storytelling is increasingly what separates a compelling beverage program from a generic spirits list.
What It Means for Operators
The Genesis House format—brand-owned hospitality space operated in partnership with an established restaurant group—continues to gain traction as a vehicle for experiential dining, particularly in luxury and lifestyle retail. Hand Hospitality's involvement brings operational depth to what might otherwise be a marketing exercise: the group's track record across both casual and fine dining contexts suggests this is a serious culinary venture rather than a brand activation with a menu attached. Joe McHugh, director of brand experience at Genesis House, framed the Bar Cham collaboration as a meeting of sensibilities: "Their respect for heritage and distinctly modern sensibility make Bar Cham a natural complement to the experience we are creating for our guests."
Reservations for daytime tea and dinner are available now on Resy, with lunch service dates to be announced.
