Maine-based frozen seafood brand Scott & Jon's is moving beyond its shrimp, salmon, and white fish roots with the launch of Homestyle Tuna Noodle Casserole — its first tuna product and a direct play on the comfort-food trend reshaping grocery freezer aisles and restaurant menus alike.

The single-serve meal combines al dente egg noodles, chunk light tuna, and crisp-tender peas in a creamy sauce made with real milk, cream, and cheddar cheese, finished with seasoned breadcrumbs. Each package delivers 21g of protein and 3g of fiber under 500 calories and cooks in four minutes — specs calibrated for the convenience-focused shopper who still wants a scratch-inspired result.

The Taste-Test Case

The brand didn't bring the SKU to market on instinct alone. In a blind central location test conducted among 103 consumers in December 2025, Scott & Jon's Homestyle Tuna Noodle Casserole was preferred 2-to-1 over a leading competing brand. Scott & Jon's scored significantly higher across every flavor measure tested — overall flavor, tuna flavor, pasta flavor, sauce flavor, and vegetable flavor — with tuna flavor, seasoning, and pasta texture cited as the primary drivers of preference. Those results were statistically significant at the 95% confidence level.

That dynamic is driving product development across frozen and refrigerated food categories, as brands compete to translate homestyle cooking occasions into convenient formats without sacrificing the sensory cues that make those dishes resonate.

For foodservice operators and retail buyers tracking the frozen seafood segment, the launch signals that the comfort-food opportunity is no longer limited to center-of-plate proteins or entrée bowls. Casserole formats — long dormant in the freezer aisle — appear to be regaining traction as a vehicle for delivering high-protein, familiar meals with minimal prep. That trend mirrors what restaurant menus have reflected in comfort-driven LTO strategies over the past two years.
