Two Industry Veterans Join SAHARA's Beverage Leadership SAHARA Las Vegas has appointed Luis "Lu" Lopez as Creative Director of Mixology and Master Sommelier Chris Gaither as Wine Director of Maroon by Chef Kwame Onwuachi. The appointments underscore the resort's effort to deepen its culinary and beverage positioning on the Strip. Lopez will oversee beverage strategy across SAHARA's portfolio of restaurants, bars, and lounges, including signature cocktail menu development, spirits partnerships, staff education, and guest experiences. Gaither will lead the wine program at Maroon, which showcases an over-500-bottle collection emphasizing wineries owned or led by women and people of color.
Lopez's Track Record Lopez has held leadership roles at The Palazzo's Cocktail Collective (home to The Dorsey, Rosina, and Electra) and Youngblood in San Diego, which earned recognition on North America's 50 Best Bars list during his tenure. He served as head mixologist for Michelin-starred Chef Tetsuya Wakuda's Wakuda in Las Vegas and worked with Fairmont Grand Del Mar. Currently, Lopez serves as Bar Director and partner of Nocturno, an Arts District cocktail destination that was a semifinalist for the James Beard Foundation's 2026 Best New Bar Award.
Gaither's Expertise Gaither is one of fewer than 300 Master Sommeliers worldwide and brings more than two decades of hospitality and wine leadership experience. At Maroon, his wine program reflects the restaurant's focus on representation and discovery, intentionally highlighting diverse producers alongside world-class wines from renowned regions. "Chris and Lu represent the next generation of beverage leadership, bringing fresh perspectives while respecting the traditions that have made SAHARA Las Vegas an icon for generations. Their contributions will play an important role as we continue writing the next chapter of the resort's story," said Alex Meruelo, Founder and CEO of The Meruelo Group.
