Rōti Rolls Out First Shrimp Menu
Rōti Modern Mediterranean has launched its Citrus Grilled Shrimp menu across all U.S. locations, marking the chain's first foray into shrimp-based offerings and a deliberate shift toward protein diversification.
The limited-time menu is available in bowl, salad, wrap, and pita formats, alongside four new beverages. The UK rollout follows on June 22.
Chef-Driven Strategy
The menu represents the first conceived by Chef Courtney Bufford-Hughes, Edible Brands' newly hired Director of Culinary Innovation who joined in early 2026. The citrus-forward approach signals a broader pivot toward seasonal, chef-driven menu development.
"Shrimp is a natural fit for Mediterranean flavors, and it was important for me to build a menu that felt vibrant and bright while honoring the bold, layered complexity Rōti is known for," said Chef Courtney Bufford-Hughes, Director of Culinary Innovation at Edible Brands. "The citrus marinade and herb vinaigrette bring a brightness that complements shrimp beautifully, and when you add roasted vegetables and sumac tomatoes, you get this dish that's just as colorful as it is fresh — which feels exactly right for summer."
What's on the Menu
All offerings feature citrus-marinated shrimp with roasted zucchini, yellow squash, and red bell peppers, plus the chain's signature spice blend and citrus herb vinaigrette. Key variations:
Bowl: Shrimp over saffron rice with cucumber, sumac tomatoes, feta, and garlic sauce.
Salad: Shrimp over spring mix with the same vegetable medley and vinaigrette.
Wrap: Shrimp in laffa bread with Mediterranean yogurt dip.
Pita: Shrimp in warm pita with yogurt dip.
New beverages include Strawberry Hibiscus Tea, Mango Lime Tea, Classic Lemonade, and Black Tea.
