New Concept Honors Hotel Legacy and Historic Figure The Roosevelt New Orleans, A Waldorf Astoria Hotel, has opened Café Alice, a new all-day dining restaurant that reimagines the former Teddy's Café. The European-style café and bar channels the "bold personality and unconventional spirit" of Alice Roosevelt, the first daughter of President Theodore Roosevelt, after whom the hotel is named.
Menu and Culinary Direction Executive Chef Daniel Mills and Pastry Chef Kareena Dennis have created a menu featuring breakfast dishes, lunch and dinner fare, and hand-crafted pastries. Signature offerings include Alice's Emily Spinach Benedict—named after Roosevelt's pet garter snake—and the Alice Blue Latte, which uses spirulina to achieve the pale blue shade that became associated with Alice Roosevelt and contains coconut, vanilla, espresso, and coconut milk. Other dishes include The Black Tie Chicken with crispy chicken bites, shaved black truffle, caviar and crème fraiche. Cocktails feature The Wild Child with Bombay Sapphire Gin and matcha; the Espresso Beignet with Altamura Vodka, Beignet Liqueur, Caffè Lucano and espresso; and Doctor's Bellini with Juliette Heirloom Peach Liqueur and Peychaud's Bitters. Pastry offerings include the Matcha-Yuzu Éclair, Sazerac Apple Tatin Entremet and Ube Basque Cheesecake. "The menu is inspired by Alice's out-of-the-box personality and the relaxed style of French brasseries while remaining true to our roots and providing guests with authentic Southern cuisine," said Mills. "What our team has delivered captures that vision entirely, elevating the traditional all-day café."
Design and Interiors Designed by ForrestPerkins, Café Alice features climbing botanicals on walls, a green latticed ceiling, marble-topped tables, and plush velvet banquettes in warm cream and sun-washed terracotta tones. The space balances refined elegance with playful design elements nodding to Roosevelt's unconventional style.
Community Partnership and Hours To celebrate the launch, Café Alice has partnered with the Audubon Nature Institute in recognition of Alice Roosevelt's love of animals. Guests purchasing the Critter Sable Cookie Sandwich will receive a discount on zoo admission, with a portion of proceeds supporting the Audubon Nature Institute's Marine Mammal Rescue program and turtle release efforts. Café Alice is open daily from 6:00 a.m. to 8:00 p.m. The venue joins The Roosevelt's existing culinary outlets, including the Sazerac Bar, Domenica, Fountain Lounge, and Rooftop Bar.
Why It Matters
Café Alice represents a broader hotel industry trend of developing standalone, narrative-driven dining concepts that serve both hotel guests and local diners. For operators, the partnership model with StiR Creative Collective—Hilton's in-house food and beverage consultancy—demonstrates how luxury hotel groups are leveraging corporate culinary resources to create differentiated, heritage-driven dining experiences rather than generic coffee-shop fare.
