Fresh-From-the-Oven Bagel Concept Arrives in Las Vegas Valley PopUp Bagels will open its first Nevada location on Friday, August 28, at 1685 E. Cactus Ave., Suite 120, in Henderson, near St. Rose Parkway and Spencer Street. Local operators Gary Rubenyan and Raffi Babaian of Lucky Bagel are heading the brand's Nevada expansion, with seven locations planned across the state. The Henderson shop opens at 7 a.m. with a grand-opening celebration featuring a live DJ, branded giveaways, and PopUp Bagels merchandise giveaways. Daily hours will be 7 a.m. to 4 p.m.
The Grip. Rip. Dip. Model PopUp Bagels serves whole, hot bagels fresh from the oven rather than pre-made sandwiches.
Customers tear pieces apart and dip them into rotating schmears and butters. Bagel flavors include plain, everything, poppy seed, salt, and sesame. Orders are available in bags of three, six, 12, or 30, with additional bagels at $3 each. Always-available schmear options are plain and scallion. Butter selections include salted butter and brown sugar cinnamon butter. The menu rotates weekly schmear and butter specials. Beverages include juices, iced teas, coffee, and cold brew.
Expansion and Local Commitment The Henderson location will also offer advance pickup and catering services for office meetings and larger gatherings. "We're excited to finally bring PopUp Bagels to the Las Vegas Valley and make Henderson our first home in Nevada," said Gary Rubenyan, owner of PopUp Bagels and Nevada partner with Lucky Bagel. "We wanted to bring something that felt different to the local breakfast scene, a place where people can grab a fresh bagel on the way to work, pick up a dozen for the office or simply make it part of their weekend routine. We're looking forward to opening our doors and becoming part of the Henderson community." Rubenyan emphasized a measured approach to expansion: "We see a lot of opportunity in Nevada, but we're not looking to rush it. Our goal is to grow thoughtfully, get to know the communities we're entering and build places people genuinely want to come back to."
About the Brand PopUp Bagels was founded by Adam Goldberg in Westport, Connecticut, in 2021.
The brand operates through Tailwind Management LLC, which manages the franchise locations and also operates Dave's Hot Chicken and Nothing Bundt Cakes franchises in partnership with other brands.
