The New Drinks
Philz Coffee is rolling out two new limited-time cold brews for fall 2026—Apple Cinnamon Roll and Pecan Pie—across all 80-plus locations in California and Chicago starting August 18. The Apple Cinnamon Roll cold brew combines caramel apple butter, Ghirardelli Vanilla Sauce, and cinnamon. The Pecan Pie variant layers buttery pecan toffee and cinnamon, finished with a sprinkle of sea salt for a sweet-savory finish the brand describes as dessert-inspired.
Both beverages are built on Philz's signature made-to-order pour-over method using responsibly sourced green coffee beans roasted at the company's Oakland facility. Customers can customize sweetness level and milk choice at no additional charge—a differentiator that positions Philz against grab-and-go coffee formats increasingly common in the fast-casual beverage segment.
Regional Pastry Strategy
Beyond the beverages, Philz is deploying a regionally tiered pastry program that gives each market its own identity. Northern California locations will carry a Pecan Pie Kouign Amann and a Cinnamon Maple Morning Bun. Southern California and Chicago locations get an Apple Cinnamon Danish and Pumpkin Bread or a Vegan Chocolate Chip Cookie and Pumpkin Bread, respectively. The market-specific approach signals a deliberate move toward localization within a multi-unit coffee and café operator framework—a tactic that can strengthen community relevance without requiring a full menu overhaul.
Beyond Pumpkin Spice
Andy Mai, Chief Business Officer, framed the menu direction plainly: "Every fall, it feels like pumpkin spice shows up just about everywhere. Here at Philz Coffee, we've always done things a little differently. This year, we looked to classic and beloved fall flavors. They're familiar and nostalgic, yet not something our customers can get everywhere else."
For multi-unit operators and beverage directors watching category trends, Philz's positioning is a deliberate counter-program to the pumpkin spice saturation that dominates fall LTO planning across QSR and specialty coffee. The move underscores a growing operator appetite for seasonal menus that deliver differentiation rather than simply checking a trend box. The fall menu is available in-store, through the Philz app—which also hosts the Philz Rewards loyalty program—and via DoorDash and Uber Eats. Items are available while supplies last.
