European-Caribbean Caviar Concept Debuts in South Florida Ockap Caviar & Cuisine has opened in Brickell as a new caviar-focused restaurant founded by Dominican restaurateur Oscar Andrés Brenes. The concept was developed in collaboration with Ducasse Conseil in Paris, emphasizing sourcing, technique, and service details.
Multiple Dining Formats The restaurant accommodates various service styles: traditional caviar service, tasting menus, à la carte dining with customized pairings, tapas-style sharing, and individual orders. This flexibility allows diners to shape their experience based on preference and occasion.
Retail Caviar Offerings Ockap sells its own caviar line by the tin, ranging from 28 grams to 1 kilogram.
Selections include Baerii, Ossetra, Kaluga Hybrid, and Beluga Hybrid, extending the brand beyond the dining room.
Why It Matters
The opening reflects growing operator interest in specialized, ingredient-driven concepts that can operate across multiple revenue streams—dine-in service, curated menus, and direct consumer retail. The Ducasse Conseil partnership signals alignment with French culinary standards, positioning Ockap as a premium destination in Miami's competitive fine-dining market.
