More than 17,000 people entered the lottery for 100 spots when TIPSTER launched its inaugural NYC Bakery Run in 2025. The Copenhagen-born food guide is raising the stakes for the 2026 edition, scheduled for October 25, by routing participants through ten bakeries across 13.1 miles — and seating them inside the three-Michelin-star dining room of Eleven Madison Park for a formal pastry course.
The format remains the same: 100 randomly selected runners move together in three pace groups, stopping to eat rather than racing for time. Most stops deliver a quick bite — croissants, cardamom buns, layer cakes — before the group continues. The Eleven Madison Park stop is different. Runners will be escorted into the dining room and served a pastry course by table, ahead of the restaurant's regular lunch service.
"Welcoming runners into our dining room gives us an opportunity to share the work of our pastry team outside the traditional tasting-menu experience," said Dominique Roy, Chef de Cuisine at Eleven Madison Park.
New Names on the Route
The 2026 lineup introduces Altbau Bakery, the debut project from Tartine cofounder Chad Robertson. "Throughout history, people have gathered around the hearth to cook, bake bread, and feed the community," Robertson said. "Welcoming runners from across New York with something warm from the oven is our hello." Librae Bakery, whose owner Dona Murad-Gerschel cited the event as a showcase for New York's distinct baking culture, returns to the route alongside Radio Bakery, La Cabra, From Lucie, L'Appartement 4F, Hani's Bakery, Elbow Bread, and Saison Bakery.
The Operator Angle
For foodservice operators watching consumer behavior, the event offers a sharp signal. TIPSTER founder Simon Evers frames the run's outsized demand — 17,000 entries for 100 spots — as evidence that experiential dining has moved well beyond the fine-dining reservation. "Cultural relevance no longer only comes from securing a table at a fine-dining restaurant," Evers said. "Today's diners bring the same enthusiasm to a remarkable slice of pizza, bagel, loaf, or pastry — and people increasingly seek out singular experiences that cannot simply be booked."
The scarcity model mirrors tactics used across the restaurant hospitality sector to build brand equity without discounting: limit access, curate the experience, and let word-of-mouth do the work. For the bakeries on the route, the event functions as high-intent discovery — directing foot traffic from an audience already self-selected for quality curiosity. That dynamic is increasingly relevant as food and beverage operators compete for consumer attention in a crowded urban market.
Participation is free. Lottery sign-ups close October 14 at 11:59 p.m. ET, with winners notified October 15. Spots are awarded in pairs across three pace groups.
