After years without a savory program, Milk Bar is reviving that menu category this summer through a limited-time collaboration with Beyond Meat, launching two plant-based baked items at its flagship locations in New York City and Los Angeles. The items run August 26 through October 5, marking the brand's first savory push in years and one of the more unconventional applications of plant-based protein in the bakery-café segment.

The Two Items

The collaboration yields two handheld formats built around Beyond Meat protein. The Beyond Breakfast Sausage & Egg Spiral wraps Beyond Breakfast Sausage patty pieces, egg, and melted cheese inside a flaky, laminated pastry ring — a morning daypart play that leans into the growing operator interest in premium breakfast formats. The Beyond Meatball Parm Roll reimagines the classic meatball parm as a portable, golden-baked dough pocket filled with Beyond Meatballs, marinara, onions, and cheese — a lunch and snack daypart option that fits the ongoing operator push toward shareable, handheld LTOs.
