MILA Omakase, the 10-seat counter on Miami Beach's Lincoln Road, will launch a Michelin Star Collaboration Series this high season, bringing two three-Michelin-starred chefs from Europe and Asia for exclusive residencies. Chef Emmanuel Renaut of Flocons de Sel in Megève, France, will take over the counter November 12–14, followed by Chef Julien Royer of Odette in Singapore on December 3–5, during Art Basel Miami week. Each chef will create a one-time bespoke tasting menu in collaboration with MILA Omakase's culinary team, available only during those dates and only to the ten guests per seating.
Renaut's Alpine Forage Meets Omakase Precision A Meilleur Ouvrier de France, Renaut holds three Michelin stars in the 2026 guide and cooks with foraged mushrooms and herbs, wild flowers, lake fish, and alpine game. At MILA Omakase, "that forager's sensibility meets the counter's Japanese-Mediterranean precision and its devotion to Japan's 72 micro-seasons. The result is a menu built around the same idea from two sides of the world, cooking that follows the season and the landscape, course by course."
Royer Brings French-Asian Fusion from Singapore Odette, located inside Singapore's National Gallery, entered the city's first Michelin Guide in 2016 with two stars and earned its third in 2019. The restaurant topped Asia's 50 Best Restaurants that same year. Chef Royer's menu features "modern French cuisine enriched by Asian influences," with signatures including hokkaido botan ebi glazed with yuzu kosho and Norwegian king crab served two ways. At Odette, "Hokkaido botan ebi is glazed with yuzu kosho and set on dashi jelly beneath caviar, while Norwegian king crab comes two ways, one tucked into a small chili-crab bun that nods to Singapore." The restaurant will reopen in December 2025 following renovations.
Track Record Sells Out The series follows MILA Omakase's recent Fall Collaboration with La Mar and Chef Diego Oka, which sold out so quickly that organizers added a second evening to the originally planned one-night event on October 15. Riviera Dining Group, the parent company, announced that additional Michelin-starred chefs from around the world will be welcomed in 2027, with the full lineup to be revealed soon. Reservations for both residencies are available through OpenTable.
Why It Matters
For Miami operators and the broader luxury dining market, the residency model offers a blueprint for driving premium-priced traffic during high season by leveraging external star power. The strategy creates scarcity and event-driven demand in a competitive market, while reinforcing MILA Omakase's positioning as a destination rather than a commodity tasting experience.
