Two-Chef Collaboration Series Brings Alpine and Singapore Cuisine to Lincoln Road MILA Omakase, the 10-seat omakase counter on Miami Beach's Lincoln Road, is hosting a pair of three-Michelin-starred chefs for exclusive residencies this season: Chef Emmanuel Renaut of Flocons de Sel (Megève, French Alps) from November 12–14, and Chef Julien Royer of Odette (Singapore) from December 3–5, coinciding with Art Basel Miami Beach week. Each residency will feature a bespoke tasting menu created in collaboration with MILA Omakase's culinary team. With only ten seats per seating, the experiences are among Miami's most limited dining events this season.

Renaut Brings Alpine Foraging to Japanese Precision Chef Emmanuel Renaut is a Meilleur Ouvrier de France whose Flocons de Sel holds three Michelin stars in the 2026 guide. His cooking centers on foraged mushrooms and herbs, wild flowers, lake fish, and alpine game, sharpened with unexpected bitterness, acidity, and color. "At MILA Omakase, that forager's sensibility meets the counter's Japanese-Mediterranean precision and its devotion to Japan's 72 micro-seasons. The result is a menu built around the same idea from two sides of the world, cooking that follows the season and the landscape, course by course."

Royer's French-Asian Fusion During Art Basel Chef Julien Royer leads Odette, a three-Michelin-starred restaurant inside Singapore's National Gallery. Odette entered Singapore's first Michelin Guide in 2016 with two stars and earned its third in 2019, the same year it topped Asia's 50 Best Restaurants. Odette serves modern French cuisine enriched by Asian influences, with signatures including Hokkaido botan ebi glazed with yuzu kosho set on dashi jelly beneath caviar, and Kampot Pepper Crusted Pigeon. The restaurant reopens in December 2025 following renovations. "That ease with Japanese ingredients and French technique makes Royer a natural fit for an omakase counter. For one week, as the global art world gathers in Miami, guests can taste his cooking without the flight to Singapore."

Earlier Success Sets Stage The collaboration series follows MILA Omakase's fall residency with La Mar and Chef Diego Oka, blending Peruvian heritage with the omakase counter. Originally planned as a one-night-only experience on October 15, the event sold out so quickly that a second evening was added for October 14. Reservations for both Renaut and Royer residencies are now open via OpenTable. MILA Omakase has indicated that additional Michelin-starred chef collaborations will continue into 2027, with a full lineup to be announced.

Why It Matters

These residencies signal a broader trend among high-volume independent restaurants: leveraging omakase and counter formats as platforms for celebrity chef partnerships. For Miami operators, the model demonstrates how limited-seat venues and special events can drive premium pricing and media attention during peak tourism seasons—and how Art Basel week remains a valuable anchor for culinary programming.
