New Cocktail Lab Opens Tonight in Manhattan CTK Bar, a 22-seat cocktail bar at 359 West 54th Street in Hell's Kitchen, opened tonight as a hybrid concept blending neighborhood bar and beverage research facility. The space was launched by Patrick Wert, Brad Nugent, and James Kaspari, all veterans of Major Food Group.
Test Kitchen Model Through their beverage management company, Innovative Beverage Strategies, the three partners develop cocktail programs for restaurants nationwide. CTK Bar serves as the testing ground—customers order drinks in the 400-square-foot front bar, and their feedback shapes recipes before they land on menus at client establishments.
Menu and Service The opening menu includes freezer martinis priced at $15, classic cocktail interpretations, and seasonal limited engagements. The bar also offers Roadies, house-made hard seltzers canned to order, and small bites including pizza bagels. Hours are currently Tuesday through Saturday, 5:00 PM to midnight, with additional days and extended service coming soon.
Why It Matters
The concept reflects a broader shift in how beverage programs are developed and validated—turning customer feedback into operational data before wider rollout. For restaurants working with Innovative Beverage Strategies, the bar provides direct access to the testing process behind their programs.
