Marius Dufay's Acclaimed Afternoon Tea Arrives in Madrid Rosewood Villa Magna will host a limited-time edition of Marius Dufay's award-winning Afternoon Tea from October 13 to November 15, 2026, at the hotel's Flor y Nata pâtisserie and café. The experience, created by the Executive Pastry Chef at The Chancery Rosewood in London, was named World's Best Afternoon Tea 2026 by La Liste.

Complete Experience, No À la Carte Unlike previous pastry collaborations at the property, this residency offers the complete afternoon tea as conceived by Dufay—no individual pastries available for separate purchase. The five-week engagement marks a shift toward hosting fully realized culinary experiences rather than à la carte offerings.

Menu and Culinary Philosophy The afternoon tea blends contemporary interpretation with traditional British ritual, pairing refined French pastry techniques with botanical and floral flavors. The experience opens with savoury creations, including Jasmine Crème Fraîche Blini and Caviar, followed by finger sandwiches featuring ingredients such as elderflower and minted garden peas with lovage and cream cheese, and geranium and smoked Scottish salmon with watercress crème fraîche. An Osmanthus Roudoudou Jelly cleanses the palate before scones arrive warm with Devonshire clotted cream, rhubarb jam, and strawberry & tiaré gardenia jam. The pastry finale showcases Dufay's signature style: Meadowsweet and Dark Chocolate Tart with buckwheat praline, Ylang Ylang and Passionfruit with cream cheese on pressed biscuit, and Orange Blossom Tropézienne filled with marzipan and cream.

About Dufay Dufay trained at prestigious French establishments including Mirazur, Pierre Gagnaire, Christophe Bacquié, and Pierre Hermé. In 2024, he was named Best Pastry Chef in the PACA region by Gault&Millau, and previously received the Michelin Passion Dessert Award. His work centers on nature, seasonality, and botanical ingredients.

Pricing and Reservations The afternoon tea costs €65 with a glass of Cava or €80 with a glass of Roederer Champagne.

Reservations can be made at villamagna.fnb@rosewoodhotels.com or +34 91 587 1985.

Why It Matters

For Madrid's hospitality operators, this residency represents a growing trend among luxury properties: hosting curated, time-limited culinary collaborations that draw both hotel guests and local diners. The model leverages outside talent and awards recognition to drive beverage and pastry revenue without permanent kitchen restructuring.
