A $35 million expansion at Leprino Nutrition's Lubbock, Texas, manufacturing facility is now complete, quadrupling the company's microparticulated whey protein production capacity and bringing approximately 20 million additional pounds of the specialty ingredient to market. The move significantly scales up Leprino Nutrition's ability to serve food and beverage manufacturers racing to meet surging consumer demand for high-protein products.

Leprino Nutrition is the specialty ingredient division of Leprino Foods Company, the world's largest producer of mozzarella cheese and a leading manufacturer of whey protein, lactose, and micellar casein. With the Lubbock upgrade complete, the company now operates two facilities dedicated to microparticulated production — the expanded Texas plant and its Fort Morgan, Colorado location. The Lubbock capacity is incremental to the site's existing sweet whey operation and will focus on consolidating externally sourced whey solids.

The Formulation Challenge

The expansion targets a genuine pain point in functional food and beverage development: as brands push protein content higher, they frequently encounter texture, taste, and stability problems that can compromise the finished product. Standard commodity whey proteins are known to introduce chalkiness, excessive viscosity, and foaming — drawbacks that become more pronounced at the high protein concentrations today's better-for-you products demand.

The centerpiece of the Lubbock buildout is MP PRO C80™, Leprino Nutrition's patent-protected microparticulated whey protein concentrate. The process creates uniformly sized protein particles that mimic the size of milk fat globules, producing a creamy, fat-like mouthfeel and low viscosity even at elevated protein levels. The ingredient is engineered for stability under high-heat processing and exhibits low to no foaming — properties particularly valuable for formulators working on puddings, desserts, baked goods, snacks, dips, dressings, sauces, and ice cream. For operators and manufacturers exploring dairy-forward ingredient innovation, this kind of scale-up from an established supplier signals a more reliable supply chain for high-performance protein formats.

Supply Confidence at Scale

"Microparticulation is one of the most technically demanding and commercially promising formats in specialty protein today," said Angela Queneau, Senior Director of Research and Development at Leprino Nutrition. "With our investment in Lubbock, customers can benefit from advanced dairy science coupled with supply confidence to formulate ambitious, high-protein products."

Supply confidence is increasingly a differentiator in the specialty protein ingredient market, where demand has consistently outpaced available capacity. The Lubbock expansion positions Leprino Nutrition to offer contracted volume at a scale that smaller or more specialized suppliers cannot match — an advantage for large food and beverage manufacturers managing complex, long-horizon product development pipelines. For industry professionals tracking beverage and food ingredient trends, the investment underscores how ingredient suppliers are committing significant capital to stay ahead of the protein fortification curve.

Backed by more than 75 years of dairy science expertise and a global distribution footprint spanning more than 70 countries, Leprino Nutrition enters this expanded capacity phase with both the manufacturing depth and the customer relationships to put the additional volume to work quickly.
