New Kitchen, New Leadership Le Rêve Restaurant & Raw Bar in Sheridan, Wyoming, has appointed Jeff Armstrong as executive chef, effective August 12. The move follows the restaurant's recent unveiling of a full kitchen—a significant expansion since the French-inspired restaurant opened in 2024 within the historic Cady Building. Armstrong will hold the executive chef title at both Le Rêve and The Warehouse Gastropub, where he currently serves. "I'm thrilled to join Le Rêve while continuing my role as executive chef at The Warehouse Gastropub," Armstrong said. "It's an exciting opportunity to help shape the culinary experiences at two of Sheridan's most distinctive restaurants. I look forward to building upon the incredible foundation at Le Rêve while introducing fresh seasonal dishes and creating memorable dining experiences for our guests."

Background and Menu Armstrong brings more than two decades of culinary experience from Four Seasons Resort & Residences Jackson Hole, Westbank Grille, and Chef Michael Mina's Handle Bar. His approach emphasizes seasonal ingredients, technical precision, and refined yet approachable cooking. New signature dishes under Armstrong's direction include Oxtail Bolognese with house-made mafaldine, shaved pecorino, bottarga, and root-to-shoot micro kale; Deconstructed Beef Wellington featuring grilled American Wagyu tenderloin, mushroom-leek pithivier, creamed spinach, sauce Bordelaise and celery root potato purée; and Sake-Broiled Chilean Sea Bass served with shrimp dumplings, julienned carrots, leeks, maitake mushrooms and Bloomsdale spinach in a fragrant shiso broth.

Transition Armstrong's first service will be August 12, following founding Executive Chef Zoilan Ruiz's final service on August 8. A Farewell Tasting Dinner honoring Ruiz is scheduled for August 4 at 5:30 p.m., with limited ticketed seating available through the restaurant's website.

The kitchen expansion and chef transition signal Le Rêve's shift from a pop-up model to full-service restaurant operations. For Sheridan's dining market, the addition of a dedicated kitchen and established culinary leadership supports the restaurant's growth trajectory in a smaller market.
