Culinary Lineup Set for Riverside Heritage Hotel Langham Hospitality Group has unveiled the food and beverage program for The Langham, Custom House, Bangkok, naming a roster of acclaimed chefs and bartenders to lead five venues at the 75-key luxury property when it opens this December. Thitid "Ton" Tassanakajohn, whose Le Du was named No. 1 on Asia's 50 Best Restaurants 2023, will lead Roi Chak Sam, a contemporary Thai restaurant on the second floor. Garima Arora, Chef-Owner of the two-MICHELIN-starred Gaa in Bangkok, will oversee the Indian concept at The Cotton Room. Ricky Lin Quoping, who worked at the three-MICHELIN-starred T'ang Court at The Langham, Hong Kong, will helm the Cantonese restaurant bearing the same name. Phukvarun "Golf" Watchmon, with 15 years in senior roles at Bangkok kitchens, takes the title of Executive Chef overseeing the property's broader culinary direction. Prot Stitpittayayut, Executive Pastry Chef, will guide pastry offerings and The Langham's signature Afternoon Tea, supported by training and experience in Paris, New York, and Bangkok. Tom Hearn, who previously worked at Vesper Bangkok and KOL Mezcaleria and The American Bar at The Savoy in London, will manage Crowntail, a multi-zone cocktail bar.
Five Venues Spanning Heritage Buildings The venues occupy the restored Custom House complex and adjacent heritage buildings along the Chao Phraya River in Bangkok's Bang Rak District. The property is developed by Rabbit Holdings, an affiliate of BTS Group, and operated by Langham Hospitality Group. Roi Chak Sam draws inspiration from the Glorious Era of Siam and royal banquet menus from the reign of King Rama V, combining rare seasonal produce, local ingredients, and refined contemporary technique. The name references the three per cent import duty once collected at Custom House. The Cotton Room, located on the Custom House ground floor, will serve breakfast, The Langham's Afternoon Tea, and a new Indian lunch and dinner concept. The space wraps around the Arrival Hall, Butler Salon, and Grand Staircase. T'ang Court extends The Langham's Hong Kong Cantonese restaurant legacy to Bangkok. The restaurant will offer signature barbecue specialities, handcrafted dim sum, premium seafood, and wok-fired dishes, with three private dining rooms on the second floor. Crowntail spans an indoor bar, Riverside Pavilion, rooftop Two Spot bar, outdoor terrace, and private pier. Named after Thailand's Crowntail Betta fish, the bar will offer aperitifs, sunset drinks, and late-night cocktails shaped by local ingredients. The hotel will also house an outpost of Chuan Spa, Langham's wellness offering based on Traditional Chinese Medicine principles.
