Late-night bakery chain Insomnia Cookies began rolling out a reformulation of six core products on Aug. 28, swapping existing chocolate chips for chunks approximately three times their size — with no price increase passed to guests. The upgrade covers Cookies 'N Cream, Confetti Deluxe, Chocolate Chunk Brownie, White Chocolate Chunk Macadamia, Peanut Butter Chunk, and Peanut Butter Cup Deluxe. The full transition across U.S., Canadian, and U.K. bakeries and digital ordering channels is expected to be complete by Oct. 1.

The Product Logic

The reformulation is a one-for-one swap by weight — chunks replace chips without adding total chocolate volume — but the larger mass creates what the brand describes as bigger melt pockets that stay gooier longer after baking. The upgraded lineup uses semisweet chocolate chunks, real white chocolate chunks, and peanut butter chunks. Certain recipes received minor formulation adjustments to accommodate the larger inclusions, while bake times and temperatures remain unchanged. "The goal was simple: give the chocolate more impact," said Jessica Murgittroyd, Cookievation consultant for Insomnia Cookies. "A warm cookie deserves big, melty pockets of chocolate, and that's exactly what the chunks deliver."

For operators and foodservice leaders watching bakery segment innovation, the move illustrates a product-upgrade strategy that improves perceived value without raising the retail price — a meaningful consideration in a cost-sensitive environment where consumers are scrutinizing every discretionary purchase.

Six Months of R&D

Insomnia began developing the upgraded recipes in November 2025. Over approximately six months, the culinary team completed multiple rounds of recipe development, operational testing, and consumer evaluation. Validation came partly through the brand's Tasting Tuesdays program, where guests sampled control cookies made with the former chips alongside chunk versions. Guest feedback aligned with the culinary team's internal findings: larger inclusions delivered a more indulgent, chocolate-forward experience.

The decision also draws on longitudinal purchase data. Since 2023, more than 1.75 million customers have included a chunk cookie in their first identifiable Insomnia Cookies purchase, signaling that the chunk format plays a measurable role in new-guest acquisition. Chocolate Chunk was already the brand's top-selling cookie before today's rollout.

Insomnia operates more than 360 locations and positions itself as a rapidly expanding late-night bakery concept. The company signals that the chunk rollout is the opening move in a broader evolution, with additional brand developments expected to be revealed over the coming months.
