New Leadership at Aspen's Landmark Hotel Hotel Jerome, Auberge Collection, has appointed Zak Gregoire as Executive Chef, effective immediately. Gregoire will oversee the property's culinary operations across seven dining venues, including the Michelin Guide-recommended restaurant Prospect, J-Bar, The Living Room, Bad Harriet, Garden Room, Felix Roasting Co., and event catering.

Background and Experience Gregoire brings experience from luxury kitchens across three continents.

He was most recently Executive Chef at NoMad London, a position he held since 2024. Earlier in his career, he served as Executive Chef at the historic Groton Inn in Massachusetts and held positions at NoMad properties in New York and Los Angeles. Raised on Nantucket Island, Gregoire developed his culinary philosophy through outdoor activities including fishing the Atlantic and cooking over open fire. He emphasizes seasonality and regional sourcing in his approach to cuisine.

Gregoire will maintain signature dishes guests have come to expect while introducing new offerings that reflect his ingredient-driven philosophy.
