The Culinary Hook

Holland America Line is returning Nieuw Amsterdam to European waters for the first time in more than a decade as part of its 2028 Europe season — and for hospitality professionals, the headline attraction aboard is Morimoto by Sea, Chef Masaharu Morimoto's only dedicated restaurant at sea. The ship joins Rotterdam, Nieuw Statendam, Volendam, and Zuiderdam for a season that stretches from January through early December 2028, positioning the line's culinary programming as a central pillar of the guest experience across the Mediterranean and beyond.

The season marks Holland America's highest number of Europe port calls in nearly a decade, including record visits to Norway, Spain, Ireland, and the Netherlands. For foodservice and hospitality operators tracking cruise-driven demand in European port cities, that volume translates directly into passenger traffic: autumn itineraries through Spain, Italy, Greece, Croatia, and Ireland are explicitly timed to coincide with harvest season and regional culinary traditions, signaling how cruise lines are increasingly programming food experiences around destination gastronomy rather than treating dining as a shipboard afterthought.

Scale and Deployment

Itineraries range from seven-day sailings to 48-day Legendary Voyages, with six Mediterranean homeports and departures covering Northern Europe, the Canary Islands, and transatlantic crossings. The 48-day Legendary Mediterranean Voyage sails roundtrip from North America. The season also includes a record six calls at Portofino in 2028 and the line's highest number of Spain visits since 2017 — both indicators of where guest demand and shore-side hospitality investment are concentrating.

Paul Grigsby, vice president of deployment and revenue planning for Holland America Line, framed the season around time-specific experiences: "We built each season around moments travelers can only experience at certain times of year, from the Netherlands in full bloom during spring to winter escapes in the Mediterranean and Canary Islands and long summer days along Europe's coastlines."

Zuiderdam returns following what Holland America describes as Evolution enhancements, adding a refreshed vessel to the Mediterranean rotation alongside Rotterdam and Nieuw Statendam for spring and fall departures. Many Mediterranean itineraries are designed to be sailed back-to-back with minimal port repetition, a structure that encourages longer bookings and higher per-guest spend — a dynamic that restaurant and hospitality operators at key ports have increasingly come to rely on as cruise traffic extends beyond summer peaks.

Implications for F&B Operators

For food and beverage professionals, the extension of Holland America's Europe season well into December — historically a dead zone for cruise traffic in Northern Europe — represents a meaningful shift in the hospitality calendar. Canary Islands sailings on Nieuw Statendam run January through March, keeping revenue flowing to port-adjacent restaurants, hotels, and food markets during the shoulder season.

The line's culinary positioning also reflects a broader trend in premium cruising: signature chef partnerships, regional cuisine integration, and destination-specific programming are now competitive differentiators, not amenities. Operators in cities like Barcelona, Lisbon, Dubrovnik, and Amsterdam can expect sustained, multi-season passenger flow as Holland America embeds itself more deeply into Europe's food and cultural calendar. Coverage of how cruise lines are reshaping food and beverage programming at sea continues to evolve as lines compete for the premium traveler.
