The program also includes a collaboration with Emmy-winning chef and restaurateur Matty Matheson, known for his work on the hit series "The Bear," who is bringing his Rizzo's Chicken Parm Sandwich to the stadium. "Opening Highmark Stadium is a landmark moment for this organization and city, and the food and beverage experience is a big part of that story," said Dom Verni, Buffalo Bills Vice President of Hospitality. "Every detail was designed to reflect the spirit and character of this community, and we're thrilled to share it with our fans this season."

Chef Nicholas Karoly Heads Culinary Operations Executive Chef Nicholas Karoly, who brings decades of large-scale venue experience to the role, is overseeing the stadium's dining program across general concessions, premium clubs, suites, and catering. "From day one, our goal was to create a culinary program as passionate as the fans it serves," Karoly said. "Our culinary team worked with incredible local businesses to craft a menu with real depth inspired by Buffalo's flavors and built to deliver something memorable every single game day."

Small Businesses and Major Sponsors Drive the Menu The menu draws on partnerships with both national sponsors—including Anheuser-Busch, PepsiCo, Molson Coors, and Labatt—and a roster of Buffalo-area restaurants and food producers. Local collaborators include Chiavetta's, a family-owned BBQ institution since 1954; Southern Junction, a James Beard-nominated restaurant blending Texas barbecue with South Indian flavors; Anderson's Frozen Custard, a family operation dating to 1946; and Babcia's Pierogi, which makes handcrafted dumplings rooted in the region's Polish heritage. Half Luna Empanadas, Pham's Kitchen (Vietnamese), and John Young's Original—cofounded in 2023 to honor the legacy of Buffalo's original chicken wing pioneer—round out the culinary roster. Wegmans supplies the kimmelweck rolls for Beef on Weck. Saputo Cheese and Treasure Cave Blue Cheese provide dairy products. Palmer Food Services, a Western New York distributor, supplies fresh produce and proteins. Sahlen's, a five-generation family packing company headquartered in Buffalo since 1869, provides hot dogs.

Signature Offerings and Specialty Drinks Beyond traditional stadium fare, Highmark Stadium will offer the Labatt Beer Horn—a novelty bison horn-shaped reusable drinking vessel exclusive to the venue—and the Tart Cherry Smash, a house cocktail made with Captain Morgan Spiced Rum, mint, lime, and tart cherry, served in a bowling ball souvenir cup. The menu also includes collaborations with women-owned and minority-owned businesses: Nikki's Chocolates (handcrafted desserts) and Park Edge Sweet Shoppe (sponge candy, a regional classic since 1948). The stadium is also working with Urban Fruits & Veggies and Buffalo Go Green, a nonprofit focused on combating food deserts, to grow and harvest peppers in Buffalo-based greenhouses for the stadium's house-made hot sauces.
