Marking its 20th year in business, Gregorys Coffee is leaning into fall with a limited-time beverage menu anchored by Banana Foster-inspired drinks across three formats — espresso latte, matcha latte and chai — alongside a rebuilt breakfast sandwich program designed to compete on both quality and protein content. The seasonal lineup is available at Gregorys coffee houses through October.

The Fall Beverage Menu

The new drinks translate the classic New Orleans dessert into three distinct coffee-house formats. The Banana Foster Latte pairs espresso with banana, butter rum, cinnamon sugar, banana chips and oat milk; its iced version adds a toasted maple rum vegan foam. The Banana Bread Chai combines banana and butter rum with spiced chai and oat milk. The Banana Foster Matcha Latte uses ceremonial-grade matcha with banana, butter rum, oat milk, cinnamon sugar and a banana chip garnish. Returning alongside the new drinks are the brand's Pumpkin Spice Latte and Smashing Pumpkin Cold Brew — both oat milk-based and vegan — which founder Gregory Zamfotis says have become non-negotiable for loyal guests.

"After 20 years in New York, there are drinks so beloved that people would notice if we ever stopped making them," said Gregory Zamfotis, founder of Gregorys. "Banana Foster is a dessert everybody already knows, and getting the banana right took the longest. Once we had it, it carried across espresso, matcha and chai."

Breakfast as a Competitive Lever

The revamped breakfast lineup is a more pointed play for the morning daypart. Every sandwich is built with two eggs cracked fresh in-store — a deliberate labor investment the brand is positioning as a quality differentiator. Options span a Ham, Egg & Cheese Croissant; Bacon, Egg & Cheese on English Muffin or Croissant; Sausage, Egg & Cheese English Muffin; and a Prosciutto, Egg & Brie Baguette with arugula, brie spread and fig jam. The lineup tops out at 47 grams of protein per sandwich.

"Breakfast on the way to work usually asks you to settle for less, and there is no good reason for that," said Jax Sperling, Vice President of Culinary & Supply Chain for Craveworthy Brands. "Every one of these sandwiches gets two eggs cracked in the store. That is not the fast way to do it, and it is why they taste the way they do."

The protein-forward positioning reflects a broader trend across the specialty coffee and fast-casual breakfast segment, where operators are increasingly using high-protein food items to justify premium price points and drive repeat morning visits. For a coffee-first brand like Gregorys, a substantive food program also raises average check size and reduces dependence on beverage attach rates alone.

Loyalty and Promotional Calendar

Gregorys is pairing the fall launch with a loyalty-driven promotional push timed to two calendar moments. On National Coffee Day (September 29), Rewards members who make any purchase earn 400 Gs — the brand's loyalty currency — redeemable for a free drip coffee. On National Frappe Day (October 7), Rewards members receive a buy-one-get-one frappe offer. The dual-promotion approach is consistent with how specialty coffee operators are using loyalty mechanics to smooth seasonal traffic and convert occasional visitors into higher-frequency regulars.

Gregorys Coffee now operates more than 50 locations across the U.S., with a concentration in New York, New Jersey and Connecticut. The brand sits within the Craveworthy Brands portfolio, which spans more than 20 concepts and over 300 locations domestically and internationally.
