Farm-to-Table Dinners Highlight Seasonal Sourcing Gjelina Las Vegas has launched its In Season chef series, a collection of chef-driven dinners celebrating the fall and winter harvest from Southern California farms and purveyors. The series is part of Culinary Crossroads, The Venetian Resort's new food and beverage showcase on the Las Vegas Strip. Each multi-course dinner costs $125 per person, inclusive of wine or spirits pairings. The menus will change with the season, with no two events identical. "Seasonality has always been at the heart of Gjelina," said Fran Camaj, founder of Gjelina Group. "Our debut In Season chef series dinners are an opportunity to share not only the food itself, but also the stories and sourcing relationships behind it. We want guests to experience the connection between the farms, the kitchen, and the table." The dinners are led by Camaj, Gjelina Group farm liaison Bethany Harris, Gjelina Group executive chef Juan Hernandez, and Gjelina Las Vegas executive chef Leonardo Barrera. Guests can also add premium wine and spirits tastings, with Altamura vodka as a specialty spirits partner.
Scheduled Events September 30: Welcome to Fall with Bautista Family Organic Dates The inaugural dinner features Bautista Family Organic Dates, including the rare Barhi variety, paired with Laura Chenel goat cheese from Sonoma, California. Curated cocktails from Altamura Vodka complement the menu. Event begins at 6:30 p.m. October 23: 'Tis the Season – Holiday Preview A festive event offering an early glimpse of Gjelina's specialty holiday menus and fall and winter ingredients, paired with seasonal libations. Event begins at 6:30 p.m. November 21: From Garden to Grid – Race Weekend Brunch A brunch experience timed to Las Vegas race weekend, featuring a mobile espresso martini from Common Room Roasters, a raw bar, fresh charcuterie, and other indulgences. Endless spirits and wine pairings are available for additional cost. Brunch runs 11 a.m. to 1 p.m.
Why It Matters
Gjelina's approach underscores the competitive positioning of ingredient-driven dining on the Strip.
By emphasizing direct farm relationships and seasonal rotation—a model honed at the original Venice location since 2008—the restaurant differentiates itself in a market where many celebrity-chef concepts rely on fixed menus. For operators, the series demonstrates how seasonal programming and transparent sourcing narratives can sustain guest interest and justify premium pricing across multiple dining occasions.
