Foxglove Communications has added Swift & Sons to its roster, taking on public relations representation for the Boka Restaurant Group's modern steakhouse in Chicago's Fulton Market. The restaurant is helmed by Executive Chef Chris Pandel, who has built a two-decade track record leading multiple Chicago concepts. Since opening The Bristol in 2008, Pandel has launched The Ives, Balena, Cira, Swift Tavern, and Zarella—earning recognition from the Jean Banchet Awards, James Beard Foundation, and Bon Appétit. "Across his restaurants with Boka, his cooking is rooted in high-quality ingredients, classic technique + the kind of genuine hospitality that keeps people coming back," according to the announcement.

Modern Steakhouse with Theater Opened in 2015, Swift & Sons reimagines the classic Chicago steakhouse through a contemporary lens. Designed by AvroKO in the former Fulton Cold Storage building within the city's historic meatpacking district, the 11-year-old restaurant combines soaring ceilings, stained glass, mosaic marble, and original concrete columns with a menu centered on prime and dry-aged beef, handmade pastas, fresh seafood, and seasonal dishes. The restaurant incorporates tableside service elements including customizable Old Fashioneds from a bar cart, sundae trolley selections, and tableside magic performances. Swift & Sons is ranked among the World's 101 Best Steak Restaurants for 2026—one of only two Chicago locations on that list.

Why It Matters

The addition underscores continued investment in elevated steakhouse concepts and tableside dining experiences in high-volume markets. As chefs and operators navigate evolving diner expectations around hospitality theater and ingredient quality, Swift & Sons' standing in national rankings signals sustained demand for well-executed, design-forward steakhouses.
