Estiatorio Milos is rolling out "Meet Me at Milos," a new summer spritz and aperitivo program across its U.S. locations, including New York and Las Vegas, alongside a seasonal Greek rosé initiative.
Spritz Lineup The five drinks draw names and flavor profiles from Greek islands: Naxos features citrus and herbs; Kythira highlights honeyed, floral notes; Mykonos captures a crisp, refreshing energy; Symi blends fragrant citrus with herbal notes; and Aegean showcases Greek citrus and herbal aromatics. Each spritz is built around Greek wines and spirits, paired with complementary modifiers and garnishes.
Greek and Cypriot Rosé Program Milos has also curated a selection of rosés from Greece and Cyprus, featuring indigenous varietals including Xinomavro, Assyrtiko, Agiorgitiko, and Mandilaria sourced from regions such as Santorini, Crete, Naoussa, Nemea, and Paphos.
About Estiatorio Milos Founded in 1979 by Greek-born restaurateur Costas Spiliadis, estiatorio Milos operates 11 locations worldwide—Montreal, New York, Miami, London, Athens, Dubai, Los Cabos, Las Vegas, Singapore, Toronto, and West Palm Beach—with additional openings planned. The group also operates Xenodocheio Milos, a five-star gastronomy hotel in Athens, and Milos at Sea, a private yacht charter in the Greek islands.
Why It Matters
As operators refocus on summer entertaining and destination-inspired dining experiences, Milos' dual emphasis on craft spritzes and Mediterranean wine exploration positions the brand to capture growing consumer interest in both approachable aperitivo culture and educational wine programs.
