New Orleans Concept Arrives Off-Strip Chef Emeril Lagasse has opened Meril at M Resort Spa Casino in Henderson, Nevada, marking his first off-Strip neighborhood restaurant in the Las Vegas area. Named after his daughter, the 220-seat Contemporary American venue is designed to blend indoor sophistication with desert views through floor-to-ceiling windows and a large wrap-around terrace overlooking the M Pool. "Bringing Meril to Las Vegas is incredibly personal to me, and opening this concept in Henderson makes it even more meaningful," Lagasse said. "Meril is a bright, energetic restaurant inspired by the places I've traveled and the dishes my family and I love to eat. It's also named after my daughter, Meril, so this restaurant has always carried a piece of my heart. We're excited to bring our New Orleans hospitality, bold flavors, and a welcoming neighborhood dining experience to the Henderson community." All-Day Menu Strategy Meril operates as a full-service destination from 6 a.m. to 11 p.m.
Sunday through Thursday, and 6 a.m. to 1 a.m. Friday and Saturday. The breakfast menu includes Andouille Sausage Potato Hash with poached egg and housemade Worcestershire, Bananas Foster French Toast with candied pecans, and fresh New Orleans Beignets with confectioners' sugar. Lunch and dinner feature small plates such as Pineapple Upside-Down Cornbread with bacon marmalade, House Boudin Balls with pepper jack and creole mustard, Gulf Yellowfin Tuna Bundles with jalapeño truffle ponzu, and Barbequed Shrimp. Larger plates include artisanal flatbreads, Shrimp & Andouille Gumbo, Blue Crab Linguine, and a Seasonal Seafood Boil with shrimp, mussels, clams, and andouille sausage.
Design and Beverage Program The restaurant blends coastal aesthetics with desert design elements, featuring custom mosaic tile flooring and a custom-built centerpiece bar. The walls display curated New Orleans-inspired artwork, including two hand-drawn pieces by Chef Emeril's daughter, Meril. The beverage program includes cocktails such as The Lushie (a seasonal frozen drink), Indigo French 75 (Empress gin, lemon, and sparkling wine), and Hi-Thymes in NOLA (Dos Hombres mezcal, strawberry purée, and hibiscus thyme syrup). The dessert menu features Emeril's Banana Cream Pie with caramel sauce and chocolate shavings, Rocky Road Bread Pudding, Grand Marnier Tiramisu, and specialty coffee drinks like the Carondelet Carajillo (Licor 43 and espresso).
