Michael Ploetz, a hospitality executive whose résumé spans The Peninsula Hotels, Four Seasons Hotels and Resorts, and the José Andrés Group, has been named General Manager of ELLMAN Estate Winery on Napa Valley's Silverado Trail. The appointment arrives as the family-owned estate celebrates its first full year welcoming guests and completes a transition that has brought winemaking entirely in-house.

The New Leadership

Ploetz joined ELLMAN in early 2026 as Estate and Sales Director, working alongside outgoing General Manager Justin Vazquez, who guided the winery through its first vintage and the launch of its guest program over eight years. In his new role, Ploetz oversees hospitality, membership, and the estate's continued growth. Vazquez, whose planned departure reflects an agreed handoff, will remain connected to the Ellman family in a brand and creative advisory capacity as he launches a new creative studio.

The hire signals a deliberate push toward a more formalized guest experience at an estate that had long operated through custom-crush facilities before bringing production home. That shift culminated in the opening of The Studio, a tasting space at the base of Soda Canyon beneath Atlas Peak. "After twenty years in luxury hospitality, I've learned that the most memorable places are not simply impressive; they are warm, personal, and deeply welcoming," Ploetz said. "Guests feel at ease from the moment they arrive, as if they have been invited into the Ellman family's home."

Estate and Wine Program

Founded by vintners Lance Ellman and Neil Ellman, whose family ties trace back to Stellenbosch, South Africa, the estate centers on a 20-acre vineyard planted in 1999 to the "Palmer" clone of Cabernet Sauvignon in an ancient cobbled riverbed. The first estate wine followed in 2016. The wine program is led by winemaker Andy Erickson, whose Napa Valley credits include Screaming Eagle, Harlan Estate, and Dalla Valle, working with associate winemaker Patrick Nyeholt and vineyard manager Domenick Bianco. The flagship bottling, the Elaine Cabernet Sauvignon, is a two-barrel release made only in select vintages and named for the family's matriarch.

For hospitality operators and luxury wine producers watching Napa Valley closely, the ELLMAN appointment illustrates a broader pattern: estates with roots in ultra-premium, allocation-driven sales are increasingly recruiting executives from fine-dining and luxury hotel backgrounds to professionalize the direct-to-consumer channel. Ploetz's experience opening and operating venues for the José Andrés Group in Los Angeles and Las Vegas, and leading DTC programs at estates associated with prominent winemakers Michel Rolland, Philippe Melka, and Jennifer Williams, positions him precisely at that intersection of experiential hospitality and wine retail.

"Our family came to Napa Valley to build something enduring," said Neil Ellman, proprietor. "Michael brings the care and precision this estate deserves, and he shares our belief that a great winery is built on relationships as much as on the land."

The staffing move reflects the competitive dynamics now shaping Napa's hospitality landscape, where beverage industry trends continue to push estate wineries toward curated, reservation-based experiences that rival fine-dining in service expectations. Operators tracking restaurant and hospitality staffing strategy will recognize the logic of importing luxury-hotel talent to anchor that guest journey.
