Early Fall Play Einstein Bros. Bagels is moving its fall menu launch into August, betting that consumers will seek seasonal flavors earlier in the year. The chain is rolling out digital-exclusive access to its Pumpkin Bagel & Pumpkin Shmear starting Aug. 19, followed by a "Kids 7 and Younger Eat Free" promotion on Aug. 22 (in-bakery only), and a full nationwide launch on Aug. 26. The Pumpkin Bagel & Pumpkin Shmear returns after a seven-year hiatus. "Our guests have been asking Einstein Bros. Bagels to bring back the Pumpkin Bagel & Pumpkin Shmear, and now a whole new generation of guests gets to try it for the first time," said Chief Marketing Officer Jessica Serrano. "This fall is about celebrating both nostalgia and new discoveries, and our seasonal menu really delivers with returning pumpkin favorites and all-new, shareable items that consumers are increasingly seeking out."
New Menu Items Alongside the returning pumpkin offering, Einstein Bros. is introducing a $3 Pull-Apart Bagel & Shmear in two varieties: Pumpkin Crunch with Pumpkin Shmear and Cinnamon Sugar with Honey Almond Shmear. The tear-and-share format is designed for dipping and sharing. The chain is also adding a Creme Brulee Iced Coffee priced at $1.99 in any size.

According to Coherent Market Insights, total spending on pumpkin-flavored products is expected to exceed $1.2 billion in 2026. Pull-apart and interactive bakery items are gaining traction, particularly those designed for social media, per Viscovery's "7 Must-Know Bakery Trends for 2026." Einstein Bros., which operates more than 700 U.S. locations and is part of Panera Brands, is among several QSRs testing earlier seasonal launches and phased rollouts to extend demand windows and drive digital engagement.
