Fast-casual breakfast brand Egg Tuck is opening its first San Diego restaurant in the Little Italy neighborhood at 1331 Columbia St., Suite 102, marking the concept's latest push into major metropolitan markets after expanding from Southern California into Illinois and Texas. The location brings the brand's total footprint to 16 restaurants and is operated by Ryan Son, Egg Tuck's largest franchisee, whose portfolio already spans Koreatown and Chicago's Michigan Avenue.

The Format

Egg Tuck's menu is deliberately narrow, centering on a single signature technique — exceptionally soft, silky scrambled eggs — tucked into brioche sandwiches and breakfast burritos. The core lineup runs from a Classic Egg with house sriracha aioli and chives to the Royal series, which layers Korean beef patties, cheese, grilled onions and pickles onto that egg base. Breakfast burritos pair the same soft scramble with crispy tater tots and sriracha aioli, with a vegan option built on Just Egg, vegan aioli and tater tots in a flour tortilla. The tight, portable menu has helped the brand build a recognizable visual identity on social media while maintaining operational simplicity — a combination that fast-casual breakfast operators have increasingly leaned on to differentiate in a crowded daypart.

Franchise Strategy

The Little Italy unit follows the brand's pattern of growing through local operators embedded in their markets. Woojung Noh serves as Operator of the San Diego location alongside Son, whose multi-unit experience across two major markets gives Egg Tuck an established franchisee scaling into a new city rather than a single-unit debut. That approach mirrors what food and beverage industry analysts have identified as a lower-risk expansion model for emerging concepts: leveraging proven franchisee relationships to enter new trade areas while preserving brand consistency.

"Little Italy has the energy, food culture and mix of residents and visitors that make it an exciting place to introduce Egg Tuck," said John Shin, Marketing and Operating Manager at Egg Tuck. Son, for his part, cited the neighborhood's active food culture as a signal the market was ready: "After opening Egg Tuck locations from Koreatown to Chicago's Michigan Avenue, I've learned what makes a neighborhood right for this brand — and Little Italy has it."

Following a soft opening, Egg Tuck will run a four-hour grand-opening promotion — sandwiches and burritos (excluding Royals) priced at $4 each from 10 a.m. to 2 p.m. — with the exact date to be announced on the brand's social channels. Egg Tuck is part of The WaBa Restaurant Group, which also operates WaBa Grill.
