New Leadership for Palm Beach Resort's Dining Portfolio Eau Resort & Spa in Palm Beach has announced two key leadership appointments in its food and beverage operation. Dany Hasbani joins as Director of Food & Beverage, while Stephen Lezama takes on the role of Beverage Director. Both bring decades of combined experience from luxury hospitality brands including The Ritz-Carlton, Waldorf Astoria, Virgin Hotels, and Hilton. The appointments underscore Eau's position in South Florida's competitive resort dining landscape, particularly following the opening of Nobu Manalapan. Hasbani and Lezama will oversee the resort's five restaurant and bar outlets—Nobu Manalapan, Angle, Breeze Ocean Kitchen, Stir, and Savor—as well as in-room dining, banquets, and special events.

Hasbani's Background Hasbani's career began in New York's family restaurant sector before transitioning to luxury hotels at the Helmsley Park Lane. He has held leadership positions at The Ritz-Carlton New York Central Park, Conrad New York Midtown, and The New York Palace. He also served on opening teams for Virgin Hotels Las Vegas, Waldorf Astoria Washington DC, Waldorf Astoria Arizona Biltmore, and Conrad Orlando. "My vision is to continue elevating every aspect of the dining experience while ensuring it feels warm, welcoming, and authentic," Hasbani said. "Eau Resort & Spa has an incredible foundation, from its talented culinary team to its distinctive dining venues. I'm excited to build upon that by creating experiences that reflect the resort's unique identity and leave a lasting impression on our guests."

Lezama's Experience Lezama's background spans nightlife, entertainment, and luxury hospitality.

His career includes roles at Hilton Fort Lauderdale Marina, The Ray Hotel Delray Beach, Curio Collection by Hilton, Live! Dining & Entertainment Districts, and Gale Hotel Miami. He has developed beverage programs, launched new concepts, and built teams across the sector. "What excites me most about hospitality is the opportunity to create moments people remember long after they leave," Lezama said. "Whether it's introducing a guest to a new wine, crafting a seasonal cocktail program, or developing experiences that encourage people to gather and connect, beverage plays an important role in creating those memories."

Restaurant Portfolio Both appointees will work alongside Executive Chef Neall Bailey.

The resort's dining options include Angle (contemporary American with steaks and seafood), Breeze Ocean Kitchen (oceanfront casual), Nobu Manalapan (Japanese cuisine from the Nobu Restaurant Group), Stir (craft cocktails and light bites), Savor (spa terrace café), and Oceana coffee shop.

Why It Matters

Resort F&B operations represent a significant revenue driver and guest satisfaction metric.

Appointing dedicated leadership for food and beverage—particularly with experience across luxury brands—signals Eau's commitment to competing on dining experience, not just accommodations. The dual appointment of a full F&B director and dedicated beverage director reflects industry consolidation around premium beverage programming as a profit center in luxury hospitality.
