Arthur Avenue Meets the Strip: New Butcher-Deli Model in Southwest Vegas

Chef Marc Marrone and Todd Lunger have opened Diamond Spur Butcher Shop & Deli at 8241 South Fort Apache Road in Las Vegas, combining a full-service butcher counter with a quick-service restaurant concept.

The hybrid model marks an expansion for Diamond Spur Provisions & Meats, which previously operated as a nationwide shipping and subscription service. The retail location now serves as the exclusive outlet for Diamond Spur's ranch beef, plus responsibly raised pork, chicken, eggs, and dry goods sourced from Audubon Certified properties across Arizona, Missouri, and South Dakota.

Menu and Concept

The deli side offers a limited, value-focused menu: a chicken parm sandwich, in-house ground burger, rotisserie chicken, steak frites with beef tallow fries, and soft serve cones. Hours run 10 a.m. to 7 p.m. daily.

Marrone drew inspiration from traditional New York meat markets for the aesthetic and operational model. "Then I got inspired to recreate the vintage atmosphere of an Arthur Avenue, Bronx meat market that I grew up with alongside my Italian family in New York City," Marrone said. "It's something that's really missing here, and I think something this part of Las Vegas needs."

Sourcing and Sustainability

All meats and proteins are sourced, processed, and overseen directly by the Diamond Spur team. The ranches operate under a regenerative agriculture model and hold Audubon Certification, supporting sustainable land stewardship and wildlife habitat preservation.
