Darling, the Chinese-inspired cocktail bar in Cambridge that opened in July 2025, will host two guest bartender collaborations over the next month, tapping into the city's growing cocktail culture.

Green Zone Pop-Up: September 14 On September 14, Darling will bring in Green Zone, the award-winning Middle Eastern cocktail bar from Washington, D.C., which was featured on the 50 Best Discovery list. The event coincides with Boston Rum Week. Guests can reserve a table from 7 to 8 p.m., with walk-ins welcome throughout the evening. Green Zone will serve signature cocktails alongside Darling's food menu, which includes the Filet O Fish Bao, Hunanese Pork Ribs, and Suan La Chow Show.

Clemente Bar Takeover: October 19 On October 19, Head Bartender Wilmer Reyes of Clemente Bar—ranked No. 15 on North America's 50 Best Bars List and a 2026 James Beard Award finalist for Best New Bar—will collaborate with Darling's team. Reyes will craft two signature drinks, with Darling's bartenders creating two of their own for the evening.

Quick Momentum for Darling Darling has gained traction since its July debut, earning Best New Bar recognition in Boston Magazine's Best of Boston 2026 awards and placing among Beli's most-bookmarked restaurants in Boston for 2025. The bar was founded by co-owners Brian Callahan (formerly of Tiger Mama, Orfano, and Row 34) and Zimu Chen (formerly of Eastern Standard, Coquette, and Mariel).
